Pineapple Fried Rice is a lip-smacking and colourful rice preparation for all.

Pineapple Fried Rice is a very popular and classic dish in Thailand. This vegetarian version of rice uses pineapple, carrot, bell pepper, some spices and cooked rice. It is so colourful and has an amazing taste that you can’t resist yourself. Traditionally the rice is served in a pineapple shell/bowl. This rice preparation has tangy and little sweet taste because of pineapple, crunchiness from bell pepper and carrot, spicy taste because of curry powder. It is a dish to satisfy your tastebuds. You can easily prepare this mouthwatering rice with easily available ingredients. And the good this is it does not require much time gets prepared. This is not only healthy but flavourful too. So, try to make this one-pot meal at your end and let us know how you liked it.

This recipe was prepared under the live cooking contest ‘Zayka World Cup’ by Namita ji. She had learnt this recipe from Thailand.

Tips and Suggestions by the Chef:-

  • You can use tinned or fresh pineapple to make this dish.
  • It is better to use raw carrot else the taste will change.
  • Serve this rice in a pineapple bowl (outer shell of pineapple).
  • You can add curry powder as per your taste.
  • Add little sugar to balance the tanginess of pineapple.

Ingredients

  • Cooked Basmati Rice - 2 Cup
  • Pineapple - 1 diced
  • Carrot - 1 diced
  • Red bell pepper/capsicum - 1/2 diced
  • Spring Onion whites - 1 Tablespoon chopped
  • Spring Onion Greens - 1 Tablespoon + for garnishing
  • Cashews - 10 to 15
  • Raisins - 10 Gram
  • Garlic - 1 Teaspoon chopped
  • Turmeric powder - 1/2 Teaspoon
  • Curry powder - 1 Teaspoon
  • Salt - as per taste
  • Soy sauce - 1 Tablespoon
  • Sugar - 1/2 Teaspoon or as per taste
  • Oil - 1 Tablespoon

Instructions

  1. Heat a wok or pan or kadai. Once it is hot add oil and heat it.
  2. Add chopped garlic and saute it until it turns light brown. Then add spring onion whites. Saute it until it is translucent.
  3. Now, add carrot and saute it on a medium flame. Cook until the carrot is little cooked. (cook until the raw taste of carrot goes away).
  4. Then add red capsicum and saute it for couple of minutes.
  5. Add cashews and raisins. Saute it for few seconds.
  6. Add diced pineapple and saute it for a minute.
  7. Add soy sauce, curry powder, salt, sugar. Mix well. Then add cooked basmati rice. Mix well but lightly.
  8. Add spring onion greens. Mix well. Cook it for a minute then switch off the gas.
  9. Yummy 'Pineapple Fried Rice' is ready to be served. Serve this rice in a pineapple shell and garnish it with spring onion greens.
