Punjabi Lassi | Dhaba Style Lassi

Punjabi Lassi | Dhaba Style Lassi is a refreshing summer drink. It is quite popular in Punjab and north India.

Punjabi Lassi | Dhaba Style Lassi is very famous across the world and is super delicious. An Indian version of a smoothie which is hard to resist. It just takes a few minutes to prepare this creamy rich drink. This is a yogurt or a curd based drink. Traditionally, It is served in a tall steel glass with a dollop of cream or malai. So, try this lassi at home with family and friends and give us your valuable feedback.

Tips and Suggestions by Mom Chef:-

  • Use only thick hung curd. So, hang the curd at least for one hour in a muslin cloth and see that there is absolutely no water in curds.
  • It is recommended to use a steel vessel for better taste.
  • whip it well only with a hand churner / Mathani . Do not use an electric mixie or blender.
  • To make it tasty, use homemade butter / or cream that is churned from dahi/curds.

Ingredients

  • Thick Curd / Gadi dahi - 1 cup
  • Crushed sugar - 2 Tablespoon
  • Ice cubes - As required
  • Homemade unsalted butter or Malai/cream - 1 Big Tablespoon
  • Almonds / Badam - Sliced for garnishing
  • Pistachios/pista - Few sliced
  • Saffron strands - Few for garnishing(soaked in water)
  • Chilled water - 1 to 2 Tablespoon

Instructions

  1. Firstly , make thick hung curd. To make thick hung curd at home you need to put thick curds in a muslin cloth and hang it for an hour for straining water.
  2. Then put the thick strained curds/hung curd in a bowl.
  3. Add crushed sugar , few ice cubes and mix it well with a hand churner/Mathani for 4 to 5 minutes continuously.
  4. Add a few more ice cubes and chilled water( if needed) and mix well.
  5. Pour the lassi into a steel serving glass from a height so as to make it frothy on top.
  6. Top it with a big dollop of homemade unsalted butter or malai /cream that is churned from curd.
  7. Garnish it with almonds and pistachios.
  8. Garnish it with saffron water ( saffron is soaked in little water for 5 minutes).
