Pyaz Kachori Paratha is a quick and easy dish.

Pyaz Kachori Paratha is a nice flavorful dish. You just need besan, onion, maida, and some spices to make this delicious dish. Moreover, you can serve it for lunch and dinner. This is a great option for weekend tea-time snacks also. It goes well with curd or any type of chutney. In addition, it tastes amazing with a nice crispy outer layer with onion and besan stuffing. Tips and Suggestions by the Mom Chef :

  • Keep the onion crunchy.
  • Oil can be added as required to the stuffing.
  • Whole wheat flour can be used instead of maida.
  • If you want, you can add ghee instead of oil to prepare the dough.
  • The dough should be medium soft otherwise the paratha might be broken.

Ingredients

  • Oil - 2 tbsp + For shallow frying
  • Asafoetida / Hing - A pinch
  • Ginger-green chilli / Adarak-hari mirchi - 1 tsp finely chopped
  • Gram flour / Besan - 1 Cup
  • Onion / Pyaz - 1 Finely chopped
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Red chilli powder / Lal mirch powder - 1 tsp
  • All spice mix powder / Garam masala - 1/2 tsp
  • Fennel seeds / Saunf - 1 tsp Coarsely crushed
  • Coriander leaves / Hara dhaniya - A handful
  • FOR PREPARING DOUGH :
  • All purpose flour / Maida - 1 Cup
  • Salt - As per taste
  • Oil - 1 tbsp
  • Water - As required
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Heat 1 tbsp of oil in a Wonderchef non stick pan. Add asafoetida and ginger-green chilli. Mix well and saute it for a few seconds on medium flame.
  2. Add besan and roast it for 2 to 3 minutes on medium flame. Keep stirring continuously till the nice aroma begin to rise and becomes golden brown.
  3. Then add onion and mix well. Saute it for 1 to 2 minutes on medium flame. Keep stirring continuously.
  4. Further, add salt, turmeric powder, red chilli powder, all spice mix powder, and fennel seeds. Mix well.
  5. Add 1 tbsp oil to it. Mix well. Then add coriander leaves and mix well. Once done, turn off the flame and let it cool down.
  6. FOR PREPARING DOUGH :
  7. Take maida in a bowl. Add salt and oil. Mix well. Now add water gradually and prepare a medium soft dough.
  8. Take a small ball sized part of the dough and flatten it. Dust it with flour and roll it to make small poori. Now add the prepared stuffing in the center of it. Then seal the ends of it to prepare a round shaped peda.
  9. Now dust it with flour and roll it to make paratha. Likewise, prepare all paratha.
  10. Meanwhile, heat the oil in a Wonderchef non stick pan for shallow frying the paratha. When the oil is hot, place paratha in oil and shallow fry it on a medium to high flame.
  11. Pour hot oil on the paratha using a spoon. Shallow fry until it turns golden brown from both sides and take it out to a serving plate. Likewise, shallow fry all paratha.
  12. 'Pyaz Kachori Paratha' is ready to be served.
