Rajgira Paratha | Amaranth Paratha is a simple and easy gluten-free paratha prepared from rajgira flour. It has a slightly sweet, nutty, and earthy flavor. It is high in protein and also contains plenty of other healthful nutrients. This paratha can be prepared even during regular days. These parathas stay soft even after cooling, so they make a nutritious tiffin box snack too. They are very healthy as amaranth or rajgira are healthy grains. Since they are grown locally in India, they are easily available. If making this rajgira paratha on vrat, serve with any side dish like vrat ke aloo, sukhi bhaji, suran sabji, sweet potato sabji, arbi fry, or paneer vrat sabji. Ingredients

  • Rajgira flour/ amaranth flour - 1 cup
  • Sendha namak/ rock salt - as required
  • Boiled potato - 2 to 3 small-sized
  • Green chili - 1 finely chopped
  • Ghee/ clarified butter - as required

Instructions

  1. Take a bowl and add rajgira flour, rock salt, green chili, and mashed potato. Mix it properly and knead it to a medium consistency dough. Do not use water for kneading the dough.
  2. Further, take a small portion from the dough and give it a ball shape and flatten it.
  3. Dust it with the rajgira flour and roll it using the rolling pin.
  4. Heat a pan and place the roti. Keep the flame low to medium.
  5. Flip it and apply ghee on both sides. Flip it again and again until it turns golden and crisp.
  6. Delicious Rajgira Paratha | Amaranth Paratha is ready to be served.
