Rice Sevai | Rice Vermicelli With Roasted Makhana is a quick and easy snack. You can prepare it with a handful of ingredients like rice sevai, veggies, and spices. This can be a good appetizer or a party snack or an evening tea-time snack. It gets ready within 12 minutes. Rice sevai has an amazing taste of raw mango with the crunchiness of roasted cashew and peanuts. Everyone will love this spicy and tangy dish. This is a very healthy recipe as it is served with fox nuts which have many health benefits like maintaining blood pressure and helping in detoxifying.   • Rice can be added instead of rice sevai.
  • To check the crispiness of makhana, Press it with your fingers, it should break easily with a popcorn-like sound.
  • TO STORE CORIANDER LEAVES / MINT LEAVES IN THE REFRIGERATOR FOR A MONTH :
  • Remove the roots of coriander leaves bunch and wash their dirt. Keep it in a deep transparent jar. Cover it with a plastic bag. Change the water every day.

Ingredients

  • FOR BOILING RICE SEVAI | RICE VERMICELLI :
  • Rice sevai / Rice vermicelli - 1 Cup
  • Water - As required
  • Salt - As required
  • Oil - 2 Teaspoon
  • FOR PREPARING RICE SEVAI | RICE VERMICELLI :
  • Oil - 1 Tablespoon
  • Capsicum - 1/2 Sliced
  • Peanuts / Mungfali - 1/2 Cup
  • Cashew / Kaju - 1/2 Cup
  • Green chilli / Hari mirchi - 2 Finely chopped (optional)
  • Mustard seeds / Rai - 1 Teaspoon
  • Black gram / Urad dal - 1/2 Teaspoon
  • Bengal gram / Chana dal - 1/2 Teaspoon
  • Asafoetida / Hing - A pinch
  • Dry red chilli / Sukhi lal mirch - 2
  • Curry leaves / Curry patta - A few
  • Raw mango / Kacha aam - 1/2 Grated
  • Turmeric powder / Haldi powder - 1 Teaspoon
  • Salt - As required
  • Coriander leaves / Hara dhaniya - For garnishing
  • FOR ROASTED MAKHANA :
  • Foxnuts / Makhana - 1 Cup
  • Clarified butter / Ghee - 2 Teaspoon
  • Turmeric powder / Haldi powder - 1/4 Teaspoon
  • Chaat masala - As required
  • Peri peri powder / Paprika powder - As required

Instructions

  1. FOR BOILING RICE SEVAI | RICE VERMICELLI :
  2. Take the required amount of hot water in a pan. Add 1 Teaspoon of oil, salt, and rice sevai into the hot water. Now cover the pan with a lid and keep it aside for 2 to 3 minutes.
  3. Once done, strain it. Wash it with cold water. Then add 1 Teaspoon oil to it and mix well. keep it aside.
  4. FOR PREPARING RICE SEVAI | RICE VERMICELLI :
  5. Heat oil in a pan. Add peanuts and cashews. Mix well and roast it for 2 to 3 minutes on medium flame.
  6. Now add mustard seeds, black gram, bengal gram, asafoetida, dry red chilli, and curry leaves. Mix well and saute it for 1 minute on a high flame.
  7. Then add green chilli, capsicum, turmeric powder, and salt. Mix well and cook it for 2 minutes.
  8. Now add raw mango. Mix well and cook it for 1 minute.
  9. Now add boiled rice sevai. Mix well. Add some salt. Mix well and garnish it with coriander leaves. Once done, turn off the flame.
  10. FOR ROASTED MAKHANA :
  11. Heat ghee in a pan. Add foxnuts. Mix well and roast it for 2 to 3 minutes on a medium flame. Stir it occasionally.
  12. Then add turmeric powder and chaat masala. Mix well. Then sprinkle peri peri powder and mix well.
  13. To check its crispiness, Press it with your fingers, it should break easily with a popcorn-like sound. Once done, turn off the flame.
  14. 'Rice Sevai | Rice Vermicelli With Roasted Makhana' is ready to be served.
