Sabji Masala | South Indian Sabji Masala is a blend of spices.

Sabji Masala | South Indian Sabji Masala is an important ingredient of South Indian recipes. According to Ayurvedic medicine, these powders help us to elevate the body temperature. This dal-based spice blend adds flavor and enhances the taste of sookhi sabji. Here we bring a very simple and easy method to make the spice mix. Tips and Suggestions by Mom Chef :

  • You can store this masala for 1 month in an airtight container.
  • Roast all ingredients on low to medium flame as it will be crunchy and increase its storability.
  • Adjust dry chilies as per your taste as you can add them at last also. Or you can take around 15 dry red chilies.
  • You can add this masala to any dry sabji.
  • Add turmeric powder during grinding spices it will give a nice colour to your masala.
  • If you want you can put grated dry coconut in place of pieces.

Ingredients

  • Coriander Seeds / Dhaniye Ke Bij - 4 Teaspoon or 1/2 Cup
  • Chickpeas Split / Chana Dal - 2 Teaspoon
  • Split Black Gram / Urad Dal - 1 & 1/2 to 2Teaspoon
  • Cumin Seeds / Jeera - 2 Teaspoon
  • Sesame Seeds / Til - 2 Teaspoon
  • Dry Coconut / Sukha Nariyal - 2 Tablespoon chopped
  • Curry Leaves / kadhi Patta - Few Leaves
  • Dried Byadagi Red Chillies / Sukhi Mirchi - 7 - 8
  • Boria Chillies - 6 -7
  • Tamarind / Imli - 2 Small Pieces ( optional )
  • Turmeric Powder / Haldi - 1/2 Teaspoon
  • Asafoetida / Hing - 1 Pinch
  • Jaggery / Gud - 1 Tablespoon

Instructions

  1. Heat a pan on low flame and add coriander seeds and dry roast it, then add chickpeas split, black gram split, cumin seeds dry roast this ingredients for 1 minute.
  2. Now add sesame seeds mix it then add dry coconut, curry leaves, dried Byadagi red chillies, boria chillies, tamarind and roast all spices for 8 to 10 minutes while roasting keep stirring the spices.
  3. Allow the roasted spice mixture to cool down. Then transfer it in a mixer bowl and add turmeric powder, asafoetida and jaggery and grind it to make fine powder.
  4. Sabji Masala | South Indian Sabji Masala is ready to store in airtight container.
