Sandesh | Sondesh | Bengali Special Sweet is one of the most popular and all-time favorite sweets from the Bengali cuisine. 

Sandesh | Sondesh | Bengali Special Sweet is a very simple, quick, and easy to prepare recipe. It is prepared from the fresh paneer which is also known as chena. The recipe requires only a few steps to get a nice smooth texture and delicious flavor. Mash the paneer and then cook it with a mixture of sugar. The cooking is very important to mix the sugar and chena together properly. It takes a hardly few minutes to get the right texture and consistency. The flavor of cardamom, the softness of the paneer, and the crunch of dry fruits make it mouthwatering sweet. Try to prepare it this festive season and enjoy it with your dear ones. Tips and Suggestions by Mom Chef:-

  • To curdle the milk, you can use citric acid, vinegar, or lemon.
  • Make sure, to keep the flame low while cooking the paneer mixture.
  • It is necessary to wash the paneer properly.
  • It is very important that sugar should melt properly in paneer.
  • You can also add rose water to give it a nice flavor.
  • It is necessary to knead and mash with the palms till the mixture becomes smooth and soft.
  • You can add dry fruits of your choice.
  • Store the sandesh in the refrigerator for 4 to 5 days and serve as required.

Ingredients

  • Full cream milk - 1/2 liter
  • Lemon juice - 1/2 lemon
  • Water - as required
  • Cold water - as required
  • Powdered sugar - 1/2 cup or as required
  • Cardamom powder - as required
  • Saffron milk - 4 to 5 saffron strands soaked in 1 to 2 teaspoons milk
  • Ghee/ clarified butter - as required
  • Dry fruits (pistachio, almond, raisins) - chopped as required

Instructions

  1. Heat full cream milk in a bowl and boil it for a few minutes on a low flame.
  2. Turn off the flame and add lemon juice.
  3. Further, drain off the curdled milk using the cloth.
  4. Rinse it with cold water properly to removes it's lemon flavor. Squeeze it and drain off the water.
  5. Now hang the cloth along with curdled milk for 15 to 20 minutes.
  6. Further, remove it from the cloth and transfer it to the plate.
  7. Mash it and add powdered sugar. Mix it very well and knead the chena until getting it all smooth.
  8. Knead and mash with the palms for a minute. Gather the whole mixture at intervals and continue to knead till the mixture becomes smooth and soft.
  9. Now, transfer the mixture to a pan and turn on the flame.
  10. Cook it on low flame by spreading and mashing well. Continue the process for 1 to 2 minutes. Overcooking will make the mixture dry, so do not overcook it.
  11. Mix it until the sugar melt and mix properly with the chena on a low flame for 30 to 45 seconds.
  12. Turn off the flame and transfer it to a plate.
  13. Now, add cardamom powder and very little saffron milk. Mix and mash it for 7 to 8 minutes. It's color and texture will change after mashing.
  14. Again knead the mixture with the palms and apply some ghee on the palm.
  15. Take the small portion of the mixture and give it a small ball shape and make a dent in the center.
  16. Lastly, garnish it with the dry fruits.
  17. Delicious Sandesh | Sondesh | Bengali Special Sweet is ready to be served.
