Shahi Dal Dhokli is a traditional Gujarati one-pot meal.

Shahi Dal Dhokli is an authentic dish of Gujarat. This recipe of dal dhokli is unique as it is made with a combination of toor dal and wheat flour dhokli to make it a complete meal. It does not need any rice or roti as a side dish. Furthermore, follow some tips, suggestions, and variations to make perfect shahi Gujarati dal dhokli. Tips and Suggestions by Mom Chef:

  • You can make half-cooked roti before making dal dhokli, to save time.
  • The dhokli pieces should be added one by one otherwise they will stick together.

Ingredients

  • FOR BOILING DAL :
  • Pigeon peas / अरहर की दाल / तुवर की दाल - 1/2 Cup
  • Turmeric powder / हल्दी पाउडर - 1/2 Tsp
  • Salt / नमक - As per taste
  • Water / पानी - As required
  • FOR PREPARING DAL :
  • Clarified butter / घी - 2 Tsp
  • Mustard seeds / राई - 1 Tsp
  • Cumin seeds / जीरा - 1 Tsp
  • Asafoetida / हिंग - A pinch
  • Peanuts / मूंगफली - 3 Tsp
  • Almonds / बादाम - 6 to 7
  • Dry red chilli / सूखी लाल मिर्च - 3
  • Bay leaf / तेज पत्ता -1
  • Curry leaves / कढ़ी पत्ता - A few
  • Sesame seeds / तिल - 1 Tsp
  • Cashew / काजू - 5 to 6
  • Red chilli powder / लाल मिर्च पाउडर - 1 Tsp
  • Tomato / टमाटर - 2 Grated
  • Cloves / लौंग - 2 to 3
  • Cinnamon stick / दाल चीनी - 1 Stick
  • Star anise / चक्रफूल - 1
  • Cardamom / इलाईची - 2
  • Jaggery / गुड़ - 1 Tsp
  • Coriander leaves / धनिया पत्ता - A handful
  • Water / पानी - As required
  • FOR PREPARING DHOKLI :
  • Wheat Flour / गेहू का आटा - 1 Cup
  • Turmeric powder / हल्दी पाउडर - 1/2 Tsp
  • Red chilli powder / लाल मिर्च पाउडर - 1 Tsp
  • Coriander powder / धनिया पाउडर - 1 Tsp
  • All spice mix powder / गरम मसाला - 1/2 Tsp
  • Salt / नमक - As per taste
  • Oil / तेल - 1 Tsp
  • Carom seeds / अजवाइन - 1/4 Tsp
  • Water / पानी - As required
  • Tsp = Teaspoon
  • Tbsp = Tablespoon

Instructions

  1. FOR PREPARING DHOKLI :
  2. Take whole wheat flour in a bowl. Add turmeric powder, red chilli powder, coriander powder, all spice mix powder, salt, oil, and carom seeds by rubbing between your palm. Mix well.
  3. Now add water gradually and knead the medium soft dough.
  4. Now take a small ball sized dough and make round shaped circular peda from the dough. Dust it with flour and roll a peda to make a roti.
  5. Meanwhile, heat a tawa. Place the roti on it and half roast it on one side. Flip it, once it is slightly brown.
  6. Half roast it from another side. Now take it out to a plate. Likewise, prepare all roti. Let it cool down. Then cut it into a small square shaped pieces to prepare dhokli. Keep it aside.
  7. FOR BOILING DAL :
  8. Wash and soak toor dal for 30 minutes. Then transfer it to a pressure cooker. Add turmeric powder and salt. Cook it till 3 to 4 whistles on a high flame. Once done, turn off the flame. Take it out to bowl and blend it using a blender. keep it aside.
  9. FOR PREPARING DAL :
  10. Firstly, heat ghee in a pan. Add mustard seeds, cumin seeds, asafoetida, peanuts, almonds, dry red chilli, bay leaf, curry leaves, sesame seeds, and cashew. Mix well and saute it for a few seconds on high flame.
  11. Now add red chilli powder. Mix well and grated tomato. Mix well.
  12. Further, add cloves, cinnamon stick, star anise, and cardamom. Mix well and saute it for 2 to 3 minutes on high flame.
  13. Now add boiled dal. Mix well. Add jaggery, coriander leaves, and little water. Cover the pan with a lid and cook it for 2 minutes on high flame until it starts to boil.
  14. Then add prepared pieces of dhokli one by one otherwise they will stick together.
  15. Now cover the pan with a lid and cook it for 2 minutes. Once done, take it out to a serving bowl.
  16. 'Shahi Dal Dhokli' is ready to be served.
