Ingredients

  • Oil - 2 tbsp
  • Cumin seeds / Jeera - 1 tsp
  • Asafoetida / Hing - A pinch
  • Bay leaf / Tej patta - 1
  • Black cardamom / Badi elaichi - 1
  • Cinnamon / Dal chini - 1/2 Stick
  • Black peppercorns / Kali mirch - 2
  • Ginger / Adarak - 1/2 Inch chopped
  • Green chilli / Hari mirch - 1 chopped
  • Bell pepper (red and yellow) / Shimla mirch - 1 Cup finely chopped
  • Carrot / Gajar - 1 Chopped
  • French beans / Beans - 1/2 Cup finely chopped
  • Cabbage / Patta gobhi - 1 Cup finely chopped
  • Cottage cheese / Paneer - 1/2 Cup diced
  • Tomato / Tamatar - 1 Finely chopped
  • Salt - As per taste
  • Coriander powder / Dhaniya powder - 1 tsp
  • Turmeric powder / Haldi powder - 1/4 tsp
  • Red chilli powder / Lal mirch powder - 1 tsp
  • All spice mix powder / Garam masala - 1/2 tsp
  • Sabji masala - 1/2 tsp (optional)
  • Water - As required
  • Fresh cream / Homemade malai - 1 tbsp
  • Dry fenugreek leaves / Kasuri methi - 1 tsp
  • Milk - 1/2 Cup
  • Coriander leaves / Hara dhaniya - For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Heat oil in a pan. Add cumin seeds, asafoetida, bay leaf, black cardamom, cinnamon stick, black peppercorns, ginger, and green chilli. Saute it for a few seconds on medium flame.
  2. Now add bell peppers, carrot, beans, and cabbage. Mix well. Cover the pan with a lid and cook it for 2 to 3 minutes on high flame. Stir it occasionally.
  3. Then add paneer and mix well. Saute it for 1 to 2 minutes on a high flame. Stir it occasionally.
  4. Now add tomato and mix well. Add salt, coriander powder, turmeric powder, red chilli powder, all spice mix powder, and sabji masala. Mix well. Cover the pan with a lid and cook it for 1 to 2 minutes on high flame.
  5. Further, add little water and mix well. Add fresh cream and dry fenugreek leaves by rubbing between your palms. Mix well.
  6. Then add milk and mix well. Boil it for 1 to 2 minutes on a high flame.
  7. Once done, garnish it with coriander leaves and take it out to a serving bowl.
  8. 'Shahi Mix Veg Sabji Without Onion Garlic' is ready to be served.
