Ingredients

  • Oil - 2 tbsp
  • Cumin Seeds / Jeera - 1 tsp
  • Asafoetida / Hing - A pinch
  • Cardamom / Elaichi - 2
  • Black Peppercorns / Kali Mirch - 3
  • Bay Leaf / Tej Patta - 1
  • Cloves / Laung - 2
  • Cabbage / Patta Gobhi - 2 Cups Finely chopped
  • Capsicum / Shimla Mirch - 2 Sliced
  • Carrot / Gajar - 1 Julienne
  • Beans - 1 Cup finely chopped
  • Coriander Powder / Dhaniya Powder - 1 tsp
  • Turmeric Powder / Haldi Powder - 1/4 tsp
  • All Spice Mix Powder / Garam Masala - 1/2 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1/2 tsp
  • Salt - As per taste
  • Dry Fenugreek Leaves / Kasuri Methi - 1/2 tsp
  • Coriander Leaves / Hara Dhania - A handful + For garnishing
  • Homemade Malai - 1 tbsp (optional)
  • FOR PREPARING GRAVY :
  • Oil - 1 tbsp
  • Tomato / Tamatar - 1 Chopped big sized
  • Dry Red Chillies / Sukhi Lal Mirch - 1
  • Cashews / Kaju - 5 to 6
  • Ginger / Adrak - 1/2 Inch chopped
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING GRAVY :
  2. Heat oil in a pan. Add tomato, dry red chilli, cashew, and ginger. Mix well.
  3. Cover the pan with a lid and saute it for 2 to 3 minutes on medium flame until the tomato becomes soft. Stir it occasionally.
  4. Once done, turn off the flame and keep it aside and let it cool down.
  5. Then transfer it to a grinding jar and grind it for a few seconds to prepare its gravy.
  6. FOR PREPARING SABZI :
  7. Heat oil in a pan. Add cumin seeds, asafoetida, cardamom, black peppercorns, bay leaf, and cloves. Mix well. Saute it for a few seconds on medium flame.
  8. Add cabbage, capsicum, carrot, and beans. Mix well. Cover the pan with a lid and saute it for 2 to 3 minutes on medium flame. Stir it occasionally.
  9. Now add the prepared gravy, coriander powder, turmeric powder, all spice mix powder, red chilli powder, salt, and dry fenugreek leaves by rubbing between your palms. Mix well.
  10. Then add coriander leaves and homemade malai. Mix well.
  11. Once done, turn off the flame and garnish it with coriander leaves. Take it out in a serving bowl.
  12. 'Shahi Mix Veg Sabzi Without Onion Garlic' is ready to be served.
