Tips and Suggestions by a Mom Chef:
- The ratio of whole wheat flour and maida should be 1:1.
- Prepare this dish using only maida or whole wheat flour.
- The ratio of flour and ghee should be 1 cup:2 tablespoons.
- Check the moyan by binding the flour. If it binds, the moyan is perfect. Else, add more melted ghee.
- Jaggery can be used instead of sugar.
- The ratio of flour and sugar should be 1:1/4.
- Milk or water can be used to prepare the dough if it needs.
- Let the dough rest for a maximum of 30 to 40 minutes.
- If can’t make shakar pare after 30 to 40 minutes, keep the dough in the refrigerator, to make it crispy.
- Fry shakar pare on low flame for 4 to 5 minutes till all-foam of oil disappear.
- Fry shakar pare one shade lighter than your desired shade.
