Ingredients

  • Oil - 1 Tablespoon + For greasing + For frying
  • Cumin seeds / Jeera - 1 Teaspoon
  • Asafoetida / Hing - A pinch
  • Ginger / Adrakh - 1 Inch grated
  • Green chilli / Hari mirchi - 2 to 3 Finely chopped
  • Carrot / Gajar - 1 Grated
  • Big green chilli / Badi hari mirchi - 1 to 2 Finely chopped
  • Cabbage / Patta gobhi - 1 Cup finely chopped
  • Hot water - 2 Cups
  • Semolina / Sooji - 1 Cup
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1 Teaspoon
  • Red chilli powder / Lal mirchi powder - 1/2 Teaspoon
  • Coriander leaves / Hara Dhaniya - A handful
  • Chaat masala - 1 Teaspoon

Instructions

  1. Heat 1 Tablespoon of oil in a pan. Add cumin seeds, asafoetida, ginger, green chilli, carrot, big green chilli, and cabbage. Mix well and saute it for 1 to 2 minutes on a high flame.
  2. Add hot water and sooji. Mix well and add salt, turmeric powder, and red chilli powder.
  3. Stir it continuously for 2 to 3 minutes until the mixture leaves the pan. Add coriander leaves and chaat masala. Mix well.
  4. Once done, turn off the flame and transfer it to the oil greased plate. Let it cool down completely. Keep it in the refrigerator for 2 to 3 hours. Then cut it into square shapes
  5. Meanwhile, heat oil in a pan for frying. Place prepared sooji square into the hot oil.
  6. Deep fry it on medium flame until become crispy and golden brown from all sides.
  7. Then, take them out on a serving plate using a slotted spoon.
  8. 'Sooji Squares' is ready to be served.
