Stuffed Sooji Appe is a yummy dinner option.

Stuffed Sooji Appe is a different and innovative dish. It is crispy and has fulfilling potato mixture. You can also serve it for breakfast or snacks. The semolina/sooji with curd is kept for soaking, so the sooji absorbs the curd. Curd being beneficial for health, overall this becomes a nutritious dish. It requires less oil for cooking. Ingredients

  • Potato/Aloo - 2 no
  • Salt - to taste
  • Kashmiri red chili powder - 1 teaspoon
  • Chaat masala - to taste
  • Oil - as required
  • Semolina/Sooji - 1 cup
  • Curd/Dahi - 1 cup
  • Turmeric powder/Haldi powder - 1 teaspoon
  • Red chili flakes - to taste (optional)

Instructions

  1. In a bowl, take the sooji and curd. Mix well and rest it for 30 minutes. The batter will be of medium consistency.
  2. Boil the potatoes, peel and grate them. Put it in a bowl, add salt, kashmiri red chili powder, and chaat masala. Mix well.
  3. Apply oil on the palms. Take a small portion of the potato mixture and make small balls.
  4. In the batter, put salt to taste. Put turmeric powder and red chili flakes. Mix well. Heat appe pan, put one drop of oil in the appe mould.
  5. Place the potato ball in the sooji batter and with the spoon place it in the appe mould. Put some more batter over it.
  6. Cook the appe on medium flame. Drizzle some oil over it. Flip using a fork and cook from both the sides till light brown in color.
  7. The Stuffed Sooji Appe is ready to be served.
