Sukhi Roti Ki Khichdi is a healthy and tasty meal for everyone. 

Sukhi Roti Ki Khichdi is a delicious way to use leftover roti. This is a healthy meal as this uses veggies like cauliflower, cabbage, potato, peas along with rice and roti. This is quick and easy to prepare using fewer easily available ingredients. This has a nice flavour of whole spices like bay leaf, cloves, black cardamom. You can serve this as a lunch and dinner to your family. It is a one-pot meal you can have with curd or as it is. Everyone will love this khichdi. Ingredients

  • Dried Roti - 4
  • Rice - 1/4 Cup
  • Potato - 2 small sized sliced
  • Cauliflower - 1/2 Cup
  • Cabbage - 1/2 Cup chopped
  • Green Chilli - 1
  • Bay Leaf - 2
  • Black Cardamom - 1
  • Laung/Cloves - 4
  • Mustard seeds - 1/2 Teaspoon
  • Turmeric powder - 1/2 Teaspoon
  • Red Chilli Powder - 1/2 Teaspoon or as per taste
  • Coriander Powder - 1/2 Teaspoon
  • Salt - as per taste
  • Coriander Leaves - as required
  • Lemon juice - juice of 1 lemon
  • Oil - 4 to 5 Tablespoon

Instructions

  1. Heat oil in a pan.
  2. Add mustard seeds, chopped green chilli, bay leaf, black cardamom, cloves. Saute for few seconds.
  3. Add sliced potato, cauliflower florets, chopped cabbage. Saute it for a couple of minutes.
  4. Then add washed rice to it. Mix well and saute.
  5. Meanwhile, heat water in a vessel. Take a bowl and add turmeric powder, red chilli powder, coriander powder, salt, little water. Mix well.
  6. Add spice mixture to the pan and mix well.
  7. Add hot water and let it boil.
  8. Once the water is boiled, add lemon juice.
  9. Add dried roti pieces. Mix well. Cover with a lid and let it cook for 2 to 3 minutes or until rotis are soft. Stir it in between. Then switch off the flame.
  10. Delicious 'Sukhi Roti Ki Khichdi' is ready to be served. Garnish it with coriander leaves and serve it hot with curd.
