Vegetable Pasta is very colourful and tasty preparation. This has the goodness of tricolour capsicum, corn, onion with pasta. It is a wholesome meal for children. Cheese added to make it tastier. The good thing is that it is so quick and easy to make. This is a perfect option for children’s tiffin. Kids will love to eat and will enjoy their tiffin. Tips and Suggestions by Mom Chef:-

  • You can use veggies as per the availability and choice.
  • Saute the veggies on a high flame. Do not overcook them, keep them crunchy.
  • You can use ghee/clarified butter instead of butter.
  • Use any type of pasta of your choice.

Ingredients

  • Pasta - 1 Cup
  • Tricolour Capsicum - 1 Cup Diced
  • Onion - 1 diced
  • Parboiled corn - 1/4 Cup
  • Mixed herbs - 1/2 Teaspoon + 1/4 Teaspoon
  • Red Chilli Flakes - 1/2 Teaspoon or as per taste
  • Tomato Sauce - 1 to 1 & 1/2 Tablespooon
  • Grated cheese - as required
  • Salt - as per taste
  • Butter - 1 Tablespoon

Instructions

  1. Boil the pasta with some salt and oil. Then drain the water completely.
  2. Now, heat butter in a pan.
  3. Add diced onion, tricolour capsicum and parboiled corn. Saute them on a high flame for couple of minutes.
  4. Then add mixed herbs, red chilli flakes to it. Mix well and saute for a minute.
  5. Add boiled pasta and toss it well. Saute it for a minute. Then add tomato sauce, mix and cook.
  6. Finally add grated cheese to it. Cook it until cheese gets melted. Sprinkle 1/4 teaspoon mixed herbs on the top. Then switch off the gas.
  7. Delicious 'Vegetable Pasta' is ready to be served.
