Veg Biryani in Pressure Cooker | One-Pot Meal is an extremely delicious dish. It is easy to prepare within no time at your home in a pressure cooker. Moreover, the flavor of mint leaves, biryani masala, and fried onion gives a wonderful texture and amazing taste. You can serve it to your guests on special occasions with any sabji, roti, naan, or paratha. In addition, you can prepare this dish with basmati rice, veggies, and some spices. So try this lip-smacking biryani at your home and enjoy it with your friends and family. Ingredients

  • Clarified Butter / Ghee - 2 tbsp
  • Cumin Seeds / Jeera - 1/2 tsp
  • Bay leaf / Tej patta - 1
  • Cinnamon / Dalchini - 1/2 Stick
  • Star Anise / Chakra Phool - 1
  • Black Peppercorns / Kali Mirch - 3 to 4
  • Black Cardamom / Badi Elaichi - 1
  • Onion / Pyaz - 1 Sliced
  • Ginger / Adrak - 1 Inch grated
  • Green Chilli / Hari Mirchi - 2 to 3 Slited
  • Tomato / Tamatar - 1 Sliced
  • Cauliflower / Fulgobhi - 1 Cup
  • Carrot / Gajar - 1 Long pieces
  • French Beans / Beans - 1 Cup chopped
  • Green Peas / Hare Matar - 1/2 Cup
  • Capsicum / Shimla Mirch - 1 Cup diced
  • Salt - As per taste
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Coriander Powder / Dhaniya Powder - 1 tsp
  • Biryani Masala - 1 tsp
  • Mint Leaves / Pudina - A few
  • Basmati Rice - 1 Cup
  • Water - As required
  • Fried Onion / Fried Pyaz - 1 Cup
  • Saffron Milk / Kesar Milk - 2 to 3 tbsp
  • Coriander Leaves / Hara Dhaniya - A handful + For garnishing
  • FOR PREPARING RAITA :
  • Curd / Dahi - 1 Cup whisked
  • Cucumber / Kheera - 1 Grated
  • Mint Leaves / Pudina - A few chopped
  • Pomegranate / Anar - 1 to 2 tbsp
  • Salt - As per taste
  • Roasted Cumin Seeds Powder / Jeera Powder - 1/2 tsp
  • Red Chilli Powder / Lal Mirch Powder - 1/4 tsp
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Soak washed basmati rice in the water for 15 to 20 minutes. Then strain them. Keep it aside.
  2. Heat ghee in a pressure cooker. Add cumin seeds, bay leaf, cinnamon stick, star anise, black peppercorns, black cardamom, and onion. Mix well.
  3. Then add ginger and green chilli. Mix well. Saute it for 1 to 2 minutes on medium flame. Keep stirring occasionally.
  4. Now add tomato and mix well. Add cauliflower, carrot, french beans, green peas, and capsicum. Mix well.
  5. Saute it for 1 to 2 minutes on medium flame. Keep stirring occasionally.
  6. Then add salt, red chilli powder, turmeric powder, coriander powder, and biryani masala. Mix well.
  7. Further, add mint leaves then keep the flame low and add soaked rice and level it.
  8. Add fried onion and mint leaves on it. Then add saffron milk and 2 tbsp of ghee.
  9. Then add 1 & 1/2 Cup of water. Then cover the cooker with its lid. Cook it on high flame till 2 whistles.
  10. Once done, turn off the flame and let it cool down completely.
  11. Then open it and add coriander leaves. Take it out on a serving plate using a spatula.
  12. FOR PREPARING RAITA :
  13. Take curd in a mixing bowl. Add cucumber, mint leaves, pomegranate, salt, roasted cumin seeds powder, and red chilli powder. Mix well.
