Veg Biryani | Veg Biryani in Pressure Cooker is a delicious preparation of rice.

Veg Biryani | Veg Biryani in Pressure Cooker is lip-smacking rice. This is a healthy dish as this uses lots of veggies like carrot, beans, potato, peas, tomato. It is aromatic and flavourful rice which comes from whole spices, mint leaves and coriander leaves. This is a colourful and healthy preparation as well. In this recipe the biryani is prepared in the pressure cooker hence the cooking time is only 15 minutes. You can easily prepare this dish for lunch or dinner. This goes well with raita, papad or any side dish of your choice. Everyone will love this quick biryani. So, try to make it at home and enjoy the dish with your family and friends.

  • It is recommended to use ghee to make the biryani.
  • You can add veggies as per the availability and your choice.
  • The measurement of water and rice is important for perfect fluffy biryani. If you are taking 1 cup rice then add 1 & 1/4 cup water to it.

Ingredients

  • Basmati Rice - 1 Cup
  • Carrot - 1 chopped into thin long pieces
  • French Beans - 1/2 Cup chopped into long pieces
  • Green Peas - 1/4 Cup
  • Potato - 1 diced
  • Onion - 1 big sized sliced
  • Ginger - 1/2 inch piece grated
  • Garlic - 4 to 5 cloves grated
  • Tomato - 1 finely chopped
  • Green Chillies - 2 slit
  • Curd - 2 Tablespoon
  • Mint Leaves - a handful
  • Coriander Leaves - a handful chopped
  • Cumin seeds - 1 Teaspoon
  • Black cardamom/Badi Elaichi - 1
  • Green Cardamom/Elaichi - 2
  • Bay Leaf/Tej Patta - 1
  • Cinnamon/Dalchini - 1 small stick
  • Black peppercorns/kali mirch - 2 to 3
  • Cloves/Laung - 2
  • Biryani Masala - 1 & 1/2 Teaspoon
  • Turmeric powder - 1/2 Teaspoon
  • Red Chilli Powder - 1 Teaspoon or as per taste
  • Coriander Powder - 1 Teaspoon
  • Roasted Cumin powder - 1/2 Teaspoon
  • Salt - as per taste
  • Water - 1 & 1/4 Cup
  • Ghee/Clarified Butter - 2 Tablespoon

Instructions

  1. Heat 2 tablespoon ghee in a pressure cooker.
  2. Add cumin seeds and let it splutter.
  3. Add black cardamom, green cardamom, bay leaf, cinnamon stick, black peppercorns, cloves. Saute for few seconds.
  4. Add sliced onion and saute it. The add grated garlic, grated ginger, slit green chillies. Saute for few seconds.
  5. Once the onion turns translucent, add finely chopped tomato. Mix well and cook for 30 seconds.
  6. Add carrot, french beans, green peas, diced potato. Mix well and saute. Add salt and saute for couple of minutes.
  7. Add Biryani Masala, turmeric powder, red chilli powder, roasted cumin powder, coriander powder. Mix well.
  8. Add beaten fresh curd. Mix well and cook.
  9. Add mint leaves, chopped coriander leaves. Mix well. The add washed basmati rice. Mix with light hands. Cover it with a plate or lid and let it cook for a minute.
  10. Add 1 & 1/4 Cup water to it. Add little salt and mix well. Add mint leaves and coriander leaves. Close the pressure cooker and let it cook for 2 whistles on a high flame, one whistle on a low flame. Then let it cool completely.
  11. Delicious 'Veg Biryani | Veg Biryani in Pressure Cooker' is ready to be served wit raita.
