Veg Clear Soup is a healthy and tasty soup for everyone. 

Veg Clear Soup is a colourful clear soup. This is a quick, easy and nutritious soup that uses lots of veggies. You just need veggies like capsicum, carrot, beans, baby corn to prepare this soup. This can be a good snack or a light dinner option for everyone. This is quick and easy to prepare as well. Everyone will love this version of clear soup. So, try to make it at home and enjoy with your family and friends. Do share your feedback as well.

Tips and Suggestions by Mom Chef:-

  • You can veggies of your choice to make this soup.
  • The ratio of veggies and soup should be 1:3. If you are taking 1 cup veggies then add 3 cups of water to it.
  • Adjust the spiciness according to your taste.

Ingredients

  • Mixed Vegetables (carrot, beans, baby corns) - 1 Cup chopped
  • Yellow and Green Capsicum - 1/4 Cup chopped
  • Green Chilli - 1 finely chopped
  • Coriander Leaves - as required for garnishing
  • Salt - as per taste
  • Black pepper powder - as per taste
  • Water - 3 Cup
  • Oil - 1 Teaspoon

Instructions

  1. Heat oil in a pan.
  2. Add chopped yellow and red capsicum and green chilli. Saute it for few seconds on a high flame.
  3. Then add chopped carrot, beans and baby corns. Saute it on a high flame for a couple of minutes. Add salt and black pepper powder while sauteing.
  4. Add 3 cups of water. Bring it to boil. Once boiled, cover and cook it for about 10 minutes or until the veggies are soft. Do not cook the veggies completely keep them crunchy.
  5. Once done, add little salt and mix well. Then switch off the flame.
  6. Delicious '' is ready to be served. Garnish it with coriander leaves and serve it hot.
