Tomato Soup | Roasted Tomato Soup is a lip-smacking broth.

Tomato Soup | Roasted Tomato Soup is a quick and easy soup recipe with a twist. The tomatoes along with onion, garlic, and carrot are roasted in butter to make this soup. By roasting the ingredients, gives a nice flavor to the soup. This does not require much preparation and cooking time. This is very soothing for winter days. Everyone will love this different type of soup and enjoy it very much. So, try to make it at home and let us know your feedback.

Tips and Suggestions by Mom Chef:-

  • It is recommended to roast the tomato in butter, as it gives a nice flavor to the soup.
  • Adjust the consistency of the soup according to your choice.
  • Add sugar according to your taste.
  • You can add seasoning of your choice to the soup. Like – add dried oregano or basil.
  • You can serve this soup by adding toasted bread or grated cheese.

Ingredients

  • Tomato - 4 cut into 4 pieces
  • Onion - 1 small sliced
  • Garlic - 4 cloves
  • Carrot - 1/2 sliced
  • Bay leaf - 1
  • Black Pepper corns - as per taste
  • Sugar - as per taste
  • Salt - as per taste
  • Butter - 1 Tablespoon
  • Coriander leaves - as required for garnishing

Instructions

  1. Heat butter in a pan.
  2. Then, add garlic and roast it for a few seconds.
  3. Add sliced onion and saute it on a high flame.
  4. Once the onion turns pinkish, add carrot. Mix well.
  5. Add tomatoes and saute for a few seconds.
  6. Add bay leaf, black peppercorns, and salt. Mix well and cook for 2 to 3 minutes until the tomatoes turn soft.
  7. Then, add water and sugar. Mix well. Cover and cook for 5 to 10 minutes or until the carrot is cooked completely.
  8. Once the carrot is cooked, turn off the flame. Let it cool completely.
  9. Remove the bay leaf and grind the cooked tomato mixture using water. Strain the soup using a strainer directly to the pan.
  10. Heat the soup. Add little salt and mix well. Let it boil and then turn off the flame.
  11. Delicious 'Tomato Soup | Roasted Tomato Soup' is ready to be served. Garnish it with coriander leaves and serve it hot.
