Veg Handi | Mixed Vegetable Handi is a very popular and delicious curry. 

Veg Handi | Mixed Vegetable Handi is a mouthwatering curry. This has lots of vegetables like cauliflower, carrot, peas, french beans, capsicum. These vegetables are cooked in a tomato-based gravy. This has no onion and garlic hence everyone can enjoy this curry. This goes well with roti, naan, paratha. This is a lip-smacking and very healthy curry. Moreover, this is very simple and easy to prepare with easily available ingredients. Everyone will love this curry. So, try to make this curry at home and enjoy it with everyone.

Tips and Suggestions by Mom Chef:-

  • You can add onion and garlic to the gravy if you want. However, saute onion and garlic and then add tomato and cook.
  • Adding homemade malai gives a rich taste to the curry. You can use fresh cream as well instead of homemade cream/malai.

Ingredients

  • Cauliflower/Phool Gobhi florets - 1/2 Cup
  • French Beans - 1/2 Cup chopped
  • Green Peas - 1/2 Cup chopped
  • Tricolour Capsicum - 2 Tablespoon
  • Carrot - 1 diced
  • Tomato - 3 medium sized roughly chopped
  • Green Chilli - 1 chopped
  • Ginger - 1/2 inch piece
  • Cashew Nuts - 4
  • Cumin seeds - 1/2 Teaspoon
  • Bay Leaf/Tej Patta - 2 small
  • Cinnamon - 1 small stick
  • Green Cardamom - 2
  • Black pepper corns - 4 to 5
  • Salt - as per taste
  • Cumin powder - 1/2 Teaspoon
  • Kashmiri Red Chilli powder - 1 Teaspoon
  • Coroander Powder - 1 Tablespoon
  • Fresh Curd - 2 Tablespoon beaten
  • Homemade Malai/Cream OR Fresh Cream - 1 Tablespoon
  • Kasuri Methi/Dry Fenugreen Leaves - 1/2 Teaspoon
  • Oil - 2 to 3 Tablespoon + 1 Tablespoon + 2 Tablespoon

Instructions

  1. Heat 2 to 3 tablespoon oil in a pan. Add cauliflower florets, chopped carrot, chopped beans, and green peas. Mix well, cover with a lid and let it cook for 2 to 3 minutes. Stir the veggies at regular intervals.
  2. Then, add diced tricolour capsicum, mix well, and cook. Once the veggies are soft, turn off the flame. Keep aside.
  3. PREPARING THE GRAVY:- Meanwhile, heat 1 tablespoon oil in a pan. Add roughly chopped tomato and cook it on a high flame.
  4. Add green chilli, ginger, and mix well. Add cashew nuts and let it cook. Once the tomato softened, turn of the flame. Let it cool completely. Then, grind the mixture to make smooth paste.
  5. PREPARING THE :-
  6. Heat 2 Tablespoon oil in a pan.
  7. Add cumin seeds, bay leaf, green cardamom, cinnamon, and black pepper corns. Saute for a few seconds.
  8. Add ground paste, mix well, and cook.
  9. Add salt, cumin powder, Kashmiri red chilli powder, and coriander powder. Mix well and cook.
  10. Once the masala leaves the pan, add fresh curd. Mix well and cook it on a low flame. Add a little water to it. Mix well.
  11. Finally, add cooked vegetable. Mix well and cook.
  12. Add homemade cream/malai and crushed kasuri methi. Mix well and cook. Add little water to adjust the consistency. Cook for a couple of minutes and then turn off the flame.
  13. Delicious 'Veg Handi | Mixed Vegetable Handi' is ready to be served.
