Achari Bhindi | Achari Okra is a lip-smacking sabji. 

Achari Bhindi | Achari Okra is a delicious sabji with achari/pickle flavors. This is quick and easy to prepare with easily available ingredients. This goes well with roti, poori, paratha. Bhindi/okra is a favorite veggie among all age groups so everyone will love this new style bhindi. The good thing is it does not require onion or garlic hence everyone can enjoy this sabji. Moreover, this requires very little effort and time to get ready. So, try to make this sabji at home and enjoy it with your family and friends.

Tips and Suggestions by Mom Chef:-

  • You can use onion and garlic if you want, but grate or finely chop them and saute them first.
  • Adjust spices according to your taste.
  • To make the bhindi non-sticky, wash and wipe it with a cloth. Cut and then pour lemon juice on it. Mix well.

Ingredients

  • Lady Finger/ Bhindi/ Okra - 500 Gram
  • Tomato - 2 Medium sized grated
  • Saunf/Fennel Seeds - 1/2 Teaspoon
  • Danamethi/Fenugreek seeds - 1/4 Teaspoon
  • Kalonji/Onion seeds - 1/4 Teaspoon
  • Cumin Seeds - 1/2 Teaspoon
  • Ginger - 1/2 inch piece grated
  • Green chilli - 1 crushed
  • Coriander powder - 1 Tablespoon
  • Turmeric powder - 1/2 Teaspoon
  • Red Chilli powder - 1/2 Teaspoon or as per taste
  • Salt - as per taste
  • Cumin/Jeera Powder - 1/2 Teaspoon
  • Garam Masala/All spice mix - 1/2 Teaspoon
  • Oil - 1 Tablespoon + 2 Tablespoon
  • Coriander Leaves - as required for garnishing

Instructions

  1. Wash the bhindi/lady finger and then wipe it with a cloth. Dry it completely before chopping it into diamond shaped pieces.
  2. Heat 1 tablespoon oil in a kadai or pan. Add chopped lady-finger pieces. Saute it on a medium flame until soft yet a little crunchy.
  3. Meanwhile, heat 2 tablespoon oil in another pan.
  4. Add fennel seeds, fenugreek seeds, onion seeds/kalonji, and cumin seeds. Saute for a few seconds on a low flame.
  5. Add grated ginger and garlic. Saute for a few seconds.
  6. Then, add grated tomato and cook it on a high flame.
  7. Once the oil leaves the masala, add coriander powder, turmeric powder, red chili powder, salt, and cumin powder. Mix well and cook.
  8. Add sauteed lady finger and mix well. Cook for a couple of minutes.
  9. Finally, add garam masala and mix well. Garnish it with coriander leaves and turn off the flame.
  10. Delicious 'Achari Bhindi | Achari Okra' is ready to be served.
