Vegetable Idli | Instant Vegetable Idli is a delicious and healthy breakfast for everyone. 

Vegetable Idli | Instant Vegetable Idli is a quick and easy recipe. This uses veggies like carrot, beans, capsicum along with sooji and curd. This makes it a healthier breakfast and tiffin option. Moreover, you just need 10 minutes of cooking time to make the idli and no fermentation required. So this is a very convenient and hassle-free dish for the busy mornings. Kids will love this dish because it is colourful idli. So, try to make it at home and enjoy with your family. Do let us know your feedback as well.

Tips and Suggestions by Mom Chef:-

  • Soaking of semolina and curd is important to make soft idli.
  • Add fruit salt to the batter just before steaming the idli.
  • You can use veggies of your choice to prepare the idli.
  • Please make sure you put enough water for steaming the idlis. And steam the idlis on a medium-high flame.

Ingredients

  • Semolina/Fine Semolina - 1 Cup
  • Fresh Curd - 1 Cup
  • Mixed Vegetable (carrot, beans, capsicum) - 1/2 Cup finely chopped
  • Salt - as per taste
  • Turmeric powder - 1/2 Teaspoon
  • Coriander Powder - 1/4 Teaspoon
  • Fruit Salt - 1 Teaspoon
  • Oil - as required for greasing

Instructions

  1. Take a bowl and add semolina and fresh curd. Mix well. Rest the batter for 15 to 20 minutes.
  2. Add finely chopped carrot, capsicum, beans. Mix well.
  3. Add turmeric powder, coriander powder, salt. Mix well.
  4. Grease idli mould with oil. Place cashew nuts on each cavity.
  5. Meanwhile, boil water in a steamer.
  6. Add fruit salt to the batter just before steaming the idli. Mix lightly. Fill the batter in idli mould.
  7. Put the idli mould in the steamer and steam the idli for 10 minutes. Check the idlis by inserting a toothpick. If it comes out clean then the idli is ready. Else steam it for 2 more minutes.
  8. Delicious 'Vegetable Idli | Instant Vegetable Idli' is ready to be served.
