Vegetable Tikki | Vegetable Cutlet recipe is a crispy, crusty, delicious, and healthy snack.

Vegetable Tikki | Vegetable Cutlet is so easy to prepare. It is prepared from veggies, spices, paneer, and bread crumbs. You can also skip the stuffing and can make the plain potato tikki or can add veggies of your choice and make it more healthy. A binding agent plays an important role while preparing vegetable tikki. It helps to keep the tikki in shape and does not allow it to crumble while frying. It also helps in crisping up the tikki while frying. Breadcrumbs work very well in preparing tikki, you can also use any other binding agent like corn starch, rice flour, gram flour, roasted besan (roasted chickpea flour), potato starch or tapioca starch. Ingredients

  • White/whole wheat/multigrain bread - 2 to 3 slice
  • Aloo/Potato - 2, boiled and mashed potato
  • Pyaz/Onion - 1 small-sized, finely chopped
  • Shimla Mirch/Capsicum (red, yellow, green) - 2 cups, finely chopped
  • Paneer/cottage cheese - 1 cup, grated
  • Coriander leaves - 1/2 bowl, finely chopped
  • Chaat masala - 1/2 teaspoon
  • Garam Masala/All Spice Mix - 1/2 teaspoon
  • Salt - as required
  • Red chilli powder/Lal Mirch Powder - 1/2 teaspoon
  • Turmeric powder/Haldi powder - a pinch
  • Lemon juice - of 1/2 a lemon, squeezed
  • Oil - as required

Instructions

  1. Pulse grind 2 to 3 slices of bread in a grinder, to form bread crumbs.
  2. In a bowl, add and mix well breadcrumbs, potato, onion, capsicum, paneer, coriander leaves, chaat masala, garam masala, salt, red chilli powder, turmeric powder, and lemon juice.
  3. Heat a pan and grease it with oil.
  4. Divide the mixture into small or medium-shaped tikkis. You can apply some oil on your palms while the shaping the tikkis.
  5. Gently place a tikki in the pan and pan-fry it. But, if your pan is large in size, you can place a few more tikkis on it.
  6. When the base becomes crispy and golden, gently flip each tikki over with a spatula.
  7. Fry the other side till it is crispy and golden. You can gently flip once or twice more till the tikki becomes crispy and golden evenly.
  8. Remove the tikkis and place them on a tissue or paper towels.
  9. Delicious 'Vegetable Tikki | Vegetable Cutlet' is ready to be served.
