You can also skip the stuffing and can make the plain potato tikki or can add veggies of your choice and make it more healthy. A binding agent plays an important role while preparing vegetable tikki. It helps to keep the tikki in shape and does not allow it to crumble while frying. It also helps in crisping up the tikki while frying. Breadcrumbs work very well in preparing tikki, you can also use any other binding agent like corn starch, rice flour, gram flour, roasted besan (roasted chickpea flour), potato starch or tapioca starch.
