Vegetables In Cheesy White Sauce is a lip-smacking snack for kids. It is easy to make for an evening snack or for any party menu. This is a nice idea to hide vegetables in white sauce. Parboiled vegetables give a nice color and texture to a creamy and cheesy white sauce. You can use this dish to make white sauce pasta as well. Just boil pasta and add it. Tips and Suggestions by a Mom Chef:

  • If you want, you can add Ghee instead of butter.
  • If desired, you can add whole wheat flour with all purpose flour.
  • The water should be at room temperature, to prepare the lumps-free white sauce.
  • If you want you can add onion, saute it before adding all purpose flour to the pan.
  • Adding cheese in white sauce is optional.
  • You can add vegetables as per choice and availability.
  • The vegetables should be boiled for 2 to 3 minutes.
  • If desired, bake the cheese white sauce vegetable dish.
  • You can add boiled pasta to make white sauce vegetable pasta.
  • You can add spices as per taste.
  • Add salt black pepper powder, and boiled vegetables to the leftover water from the boiled vegetables to make soup from it.

Ingredients

  • Butter - 1 tbsp
  • All purpose flour / Maida - 1 tbsp
  • Water - 1 Cup
  • Milk - 1 Cup + As required
  • Sugar - 1/2 tsp
  • Salt - As per taste
  • Black pepper powder / Kali mirch - 1 tsp
  • Grated cheese - 1 tbsp + For garnishing
  • Parboiled sweet corn - 1 Cup
  • Parboiled cauliflower / Phulgobhi - 1/2 Cup chopped
  • Parboiled carrot / Gajar - 1 Finely chopped
  • Chilli flakes - For garnishing
  • Oregano - For garnishing
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Heat butter in a pan. Add all purpose flour. Mix well. Roast it well for 1 to 2 minutes on low flame till it turns into nice golden brown and the aroma of its roasting begins to rise. Keep stirring continuously.
  2. Then add water and keep stirring continuously to make a lumps-free mixture. Then add milk. Keep stirring continuously for 1 to 2 minutes on low flame until it becomes medium thick consistency mixture.
  3. Now add sugar, salt, and black pepper powder. Mix well.
  4. Further, add cheese. Mix well for 1 to 2 minutes till the cheese melts. Add a little milk to adjust the consistency of the white sauce.
  5. Then add sweet corn, cauliflower, and carrot. Mix well for 1 to 2 minutes on low flame.
  6. Once done, take it out to a serving plate. Garnish it with cheese, chilli flakes, and oregano.
  7. 'Vegetables In Cheesy White Sauce' is ready to be served.
