Watermelon Rind Sabji | Tarbooj Chilka Sabji is an old and traditional recipe.

Watermelon Rind Sabji | Tarbooj Chilka Sabji is a very healthy and nutritious dish. Usually, the green skin part of the  watermelon often goes into discard item. But, this green part is also edible. As, watermelon is rich in citrulline an amino acid. The green part contains more of this amino acid. This recipe illustrates, how easily you can prepare this dish.   • Cut and consume the red part of the watermelon. Peel off/remove the back green color skin of the watermelon. And retain the middle portion between the green skin and red part of the water melon.

Ingredients

  • Oil - 1 tablespoon
  • Cumin seeds/Jeera - 1 teaspoon
  • Rai/Mustard seeds - 1 teaspoon
  • Ginger/Adrak - 1 teaspoon, grated
  • Hari Mirch/Green Chili - 1 finely chopped
  • Hing powder/Asafoetida powder - a pinch
  • Watermelon rind/Tarbooj chilka - 2 to 3 cups, cut into pieces
  • Haldi powder/Turmeric powder - 1/2 teaspoon
  • Red Chili Powder/Lal Mirch Powder - to taste
  • Salt - to taste
  • Dhania powder/Coriander seeds powder - 1 to 1&1/2 teaspoon
  • Tamatar/Tomato - 1 chopped
  • Coriander leaves - to garnish

Instructions

  1. Heat oil in a pan. Then, put cumin seeds, mustard seeds, grated ginger and finely chopped green chili. Saute for one minute.
  2. As the tempering crackles, put the asafoetida powder. Then, put the watermelon rind pieces. Mix well, cover and cook for 2 minutes.
  3. Open the cover lid, mix once. Then, put the turmeric powder, red chili powder, salt to taste and coriander seeds powder. Mix well.
  4. Again cover and cook for 3 to 4 minutes on a high flame. After 3 to 4 minutes, put the chopped tomato, mix and cover. Now, cook for 2 to 3 minutes on medium flame.
  5. After the sabji is well cooked garnish with coriander leaves.
  6. The Watermelon Rind Sabji | Tarbooj Chilka Sabji is ready to be served.
