Tawa Sabzi | Mixed Tawa Sabzi is a lip-smacking side dish for all. 

Tawa Sabzi | Mixed Tawa Sabzi is a yummy weekend special sabzi. This has lots of veggies which tastes amazing with roti or paratha. It requires Potato, onion, brinjal, capsicum, cauliflower, pointed gourd, big sized green chilli, bitter gourd and some spices. The veggies are cooked with the spices on the tawa as the name suggests. This is a healthy and tasty dish. It is a must-try for foodies, tastes awesome when served with garma garam chapati or roti. In North India, you will find this delicious option in almost every wedding menu. So, try to make this delicious sabzi for your family and friends and let us know how you liked it.

Ingredients

  • Potato - 4
  • Onion - 4 small sized
  • Brinjal- 2 small sized
  • Green chilli - 2 big sized
  • Tricolour Capsicum - 1 Cup diced
  • Tindora/Kundru/Ivy Gourd/Coccinia grandis - 2 to 3
  • Cauliflower florets - 1/2 Cup
  • Bitter Gourd - 2
  • Vegetable oil - 2 Tablespoon + as required to shallow fry
  • Cumin seeds - 1/2 Teaspoon
  • Hing/Asafoetida - a pinch
  • INGREDIENTS FOR TAWA MASALA:-
  • Salt - 1 Tablespoon
  • Red chilli powder - 2 Tablespoon
  • Coriander powder - 2 Tablespoon
  • Dry mango powder or Amchur - 1 Tablespoon
  • Garam masala/All Spice mix - 1 Tablespoon

Instructions

  1. Wash all vegetables properly.
  2. Wash, peel and cut potato into 3 pieces. Peel the onion. Peel the bitter gourd after washing.
  3. Cut the brinjal from bottom so that it remain joined to the stem. Make a slit in the bitter gourd, Tindora/Kundru/Ivy Gourd/Coccinia grandis, green chilli.
  4. Heat oil in a pan for shallow frying.
  5. Add potato, brinjal, cauliflower florets, bitter gourd, tindora. Mix well and cook. Cover it with lid and cook it for about 7 to 8 minutes or until veggies are soft.
  6. PREPARING TAWA MASALA:- Take a bowl and add red chilli powder, coriander powder, dry mango powder, garam masala, salt. Mix well.
  7. Put tawa on gas and add 2 tablespoon oil and heat it. Then add asafoetida and cumin seeds. Let the seeds crackle.
  8. Now, add one pieces of each vegetables and sprinkle spices mixture and sauté properly then it out. Then switch off the gas.
  9. Now Tawa Sabzi | Mixed Tawa Sabzi is ready to serve.
