Achari Kaddu | Achari Pumpkin is a mouthwatering curry.

Ever tried making a spicy curry from pumpkin. If so, here is the recipe for Achari Kaddu | Achari Pumpkin. It is very healthy and delicious for you and your family. This is a curry that has flavours of achaar/pickle. This is tangy, spicy, and a little sweet in taste that goes well with roti/paratha. One should try this recipe once and the flavour of this curry will remain for a longer time in your mind. Moreover, Pumpkins are good for the heart, vision, skin, and help to control your blood pressure. So, try this yummy curry/sabji at home and let us know how you liked it.

Ingredients

  • Pumpkin/Kaddu - 1 big bowl
  • Green Chilli - 2 cut into long pieces
  • Ginger - 1/2 inch piece chopped or grated
  • Tamarind/Imli Pulp - 1 Tabeslpoon
  • Coriander Leaves - A handful chopped
  • Jaggery powder/Grated Jaggery/Gud - 1 Tablespoon or as per taste
  • Mustard oil - 2 Tablespoon
  • Cumin seeds/jeera - 1/4 Teaspoon
  • Mustard seeds - 1/4 Teaspoon
  • Fennel seeds/saunf - 1/2 Teaspoon
  • Fenugreek Seeds/danamethi - 1/2 Teaspoon
  • Onion Seeds/kalonji - 1/4 Teaspoon
  • Turmeric powder - 1/4 Teaspoon
  • Red chilli powder - 1/2 Teaspoon
  • Hing/Asafoetida - a pinch
  • Coriander powder - 1 Teaspoon
  • Garam masala/All spice mix - 1/2 Teaspoon
  • Cumin/Jeera powder - 1/2 Teaspoon
  • Salt - as per taste

Instructions

  1. Cut pumpkin in square pieces. Take oil in a pan. Heat it and put all the spices mentioned in achaari masala.
  2. Heat mustard oil in a pan. Add asafoetida.
  3. Add fenugreek seeds, fennel seeds, cumin seeds, onion seeds/kalonji, and mustard seeds. Let the seeds crackle.
  4. Add chopped ginger and green chilli to the pan and saute them for a few seconds.
  5. Add pumpkin pieces to it and saute the mix on medium flame for 2 to 3 minutes.
  6. Then add salt, turmeric powder, and coriander powder. Mix well, cover with a lid, and cook it for 5 to 7 minutes or until the pumpkin is completely cooked. Stir it in between.
  7. Once it gets cooked, add red chilli powder, garam masala, cumin powder, jaggery powder, and tamarind pulp. Mix well. Cook for a minute and then turn off the flame. Garnish it with chopped coriander leaves.
  8. Enjoy tasty and healthy Achari Kaddu | Achari Pumpkin with roti/paratha/poori.
