Aloo Gobhi Ki Sabzi | Masala Gobhi Aloo is a mouthwatering savoury side dish.

Aloo Gobhi Ki Sabzi | Masala Gobhi Aloo is a flavourful curry of cauliflower. This is very simple and easy to make with easily available ingredients. This goes well with roti or paratha. You can serve it for lunch or dinner or even in the tiffin. Everyone will love to eat this tasteful sabzi as cauliflower and potato both are favorite of all. There are many ways to make the cauliflower but this style is different. The shallow fried cauliflower and potato are cooked in the onion-tomato based gravy with some basic spices. So, try to make this sabzi at home and let us know your feedback.

Ingredients

  • Cauliflower/Phool Gobhi - 200 Gram
  • Potato/Aloo - 200 Gram
  • Onion - 1 sliced
  • Tomato - 3 pureed
  • Crushed Ginger-Green Chilli - 1 Teaspoon
  • Bay Leaf/Tej Patta - 1
  • Cinnamon - 1 small stick
  • Black Cardamom/Badi Elaichi - 1
  • Green Cardamom/ - 2
  • Hing/Asafoetida - a pinch
  • Cumin seeds - 1/2 Teaspoon
  • Mustard seeds - 1/2 Teaspoon
  • Turmeric powder - 1/2 Teaspoon + 1/2 Teaspoon
  • Coriander powder - 1 Teaspoon
  • Red Chilli powder - 1/2 Teaspoon
  • Salt - as per taste
  • Cumin powder - 1/2 Teaspoon
  • Garam Masala/All spice mix - 1/2 Teaspoon
  • Kasuri Methi/Dry Fenugreek Leaves - 1/2 Teaspoon
  • Oil - as required for shallow frying + 1 Tablespoon
  • Coriander leaves - as required for garnishing

Instructions

  1. Clean the cauliflower well. Cut into pieces and wash well. Cut the potatoes into long pieces.
  2. Boil the water and add salt and turmeric. Add cauliflower pieces and boil it once. Then strain the water completely.
  3. Heat oil for shallow frying. Shallow fry the cauliflower and potato on a high flame until cooked. Keep stirring in between.
  4. Meanwhile, heat 1 tablespoon oil in a pan. Add asafoetida.
  5. Then add mustard and cumin seeds. Let the seeds crackle. Add bay leaf, cinnamon, and black and green cardamom.
  6. Add crushed ginger-green chilli. Saute for a few second.
  7. Add sliced onion and saute until translucent.
  8. Now, add tomato puree and cook it on a high flame.
  9. Add turmeric powder, coriander powder, red chilli powder, salt, and cumin powder. Mix well and cook until oil leaves the sides of the pan.
  10. Add shallow fried cauliflower and potato. Mix well to coat. Cook for a minute.
  11. Finally, add garam masala and dry fenugreek leaves/kasuri methi. Mix well and cook for a minute then turn off the gas. Garnish it with coriander leaves.
  12. Delicious 'Aloo Gobhi Ki Sabzi | Masala Gobhi Aloo' is ready to be served with roti or paratha.
