Adadiya Pak | Gujarati Style Adadiya Pak is a very popular traditional recipe.

Adadiya Pak | Gujarati Style Adadiya Pak is a healthy and delicious recipe. This is an authentic Gujarati dish prepared in the winter season. This uses lots of spices, dry fruits, ghee/clarified butter along with urad dal aata/black gram flour. It helps to improve immunity and prevents back pain, body pain, and many health problems. Everyone can have this laddu to be healthy in winters. It also prevents cold and cough as this uses ganthoda powder (a type of spice). Moreover, this strengthens the body and you will be healthy for the whole year. In every Gujarat, this is prepared and everyone loves to have it. You can have it in the morning. So, try to make this laddu at home and let us know your feedback.

Ingredients

  • Urad Dal Aata/black Gram flour - 200 Gram
  • Mawa/Khoya - 200 Gram
  • Sugar - 150 Gram
  • Adadiya Masala (mixture of 17 Spices) - 1/4 Cup
  • Piprimul/Ganthoda Powder - 1/4 Cup
  • Edible Gum/Gond - 2 to 3 Talespoon (fried in ghee)
  • Grated Dry Coconut - 1/2 Cup
  • Dry Fruit Powder (Almond, Cashew, Pistachios) - 1/2 Cup
  • Poppy Seeds - 3 to 4 Talespoon
  • Ghee/Clarified butter - 500 to 700 ML OR use as required
  • INGREDIENTS FOR SPICE MIXTURE:-
  • Cardamom/Elaichi - 6 to 7
  • Cloves/Laung - 7 to 8
  • Nutmeg/Jaifal - 1 powdered
  • Dry Ginger powder/Sonth - 3 to 4 Tablespoon
  • Black Pepper Corns - 1 to 2 Tablespoon
  • Cinnamon/Dalchini - 2 small stick

Instructions

  1. Grind cardamom, cloves, cinnamon, nutmeg, dry ginger, black pepper together to make spice powder.
  2. Fry the edible gum in ghee and keep aside.
  3. Add 2 tablespoon ghee and 1 tablespoon milk in the black gram flour/urad dal aata. Mix well and keep aside for one hour. Then, sift it.
  4. Now, heat 1/2 cup ghee in a pan.
  5. Add urad dal aata/black gram flour and roast it on a low flame.
  6. Once it starts bubbling, add mawa. Mix well and roast it on a medium flame until it turns brownish in color and then turn off the flame.
  7. Add adadiya masala (a mixture of 17 spices), little ghee ad mix well.
  8. Add piprimul/ganthoda powder, spice powder(cardamom, cloves, cinnamon, nutmeg, dry ginger, black pepper), fried edible gum, dry coconut, dry fruit powder. Mix well. Add more ghee if the mixture seems dry.
  9. Add poppy seeds and mix well.
  10. Now, prepare the sugar syrup. Take a pan, add sugar, and just enough water to submerge the sugar. Heat it on a low flame to make sugar syrup of one string consistency.
  11. Add sugar syrup to the dal mixture. Mix well. Add more ghee if required.
  12. When the mixture is warm make small laddu. Roll the laddu in crushed dry fruit and grated coconut. Store it in an airtight container.
  13. Delicious 'Adadiya Pak | Gujarati Style Adadiya Pak' is ready to be served.
