Alan Ki Sabji | Dahi Wali Methi Ki Sabji is a popular, easy and healthy sabji from Rajasthani cuisine. The flavor of methi – besan makes it different from the other methi sabji. It is mainly served with roti. Fenugreek has several benefits like it helps to control diabetes, prevent heart attacks, reduce cholesterol, aid digestion, and many more. Ingredients

  • Fenugreek leaves/Methi leaves - 1 bunch finely chopped
  • Water - 1 & 1/2 to 2 glasses
  • Gram flour/Besan - 2 tablespoons
  • Curd/Dahi - 1 glass
  • Garlic/Lahsun - 3-4 cloves finely chopped
  • Ginger-Green chili paste - 1 teaspoon
  • Salt - to taste
  • Red chili powder/Lal mirch powder - 1/2 teaspoon + 1/2 teaspoon for tadka
  • Asafoetida/Hing powder - 1/4 teaspoon + a pinch for tadka
  • Clarified butter/Oil - 1 tablespoon
  • Cumin Seeds/Jeera - 1 teaspoon
  • Dry Red Chilli/Sukhi Mirchi - 1
  • Coriander leaves - to garnish

Instructions

  1. Wash properly and then finely chop the methi leaves.
  2. Heat water in a wok/kadhai. Put methi leaves in it and let it boil on high flame. Meanwhile in a bowl put gram flour and add water in it. Whisk it together so that the lumps do not form. Then add a little water to make it flowing consistency .
  3. Then, put this water-gram flour mixture in the wok/kadhai and mix well. Now add beaten curd and stir continuously on low flame till the curd combines well. Then add the red chili powder, hing, ginger-green Chilli paste and salt. Mix well and let it boil for 8 - 10 minutes.
  4. Meanwhile for preparing the tadka , heat ghee/oli in a pan. Add cumin seeds, hing, red chili powder and dry red chili.
  5. Take out the sabji in a bowl and then pour the tadka on it. Now garnish the sabji with fresh coriander leaves.
  6. 'Alan ki Sabji | Dahi Wali Methi Ki Sabji' is ready to be served.
