Aloo Dhaniya Sabji is a deliciuos dish.

Aloo Dhaniya Sabji is a gravy base dish. You can make this dish easily in a pressure cooker. The coriander masala preparation makes this dish healthy and relishing. The coriander masala requires coriander leaves, peanuts powder, turmeric powder, red chili powder, coriander & cumin seeds powder. Adding the lemon juice and ginger-green chili paste adds flavor to it. The addition of oil helps to bind all the spices with coriander leaves together. It tastes great with hot roti or phulka.   • The peanuts should be lightly roasted and ground to make a coarse powder.
  • The coriander leaves should be first washed and then chopped.
  • For making the sabji directly in a kadhai or pan, you can use boiled potato.
  • If you want, you can skip the sugar.

Ingredients

  • Oil - 1 to 2 tablespoon
  • Cumin seeds/Jeera - 1 teaspoon
  • Asafoetida powder/Hing powder - a pinch
  • Onion/Pyaz - 1 big long cut
  • Potato/Aloo - 2 big sliced
  • Coriander leaves - 1 cup chopped
  • Roasted peanut powder/Mungphali powder - 2 tablespoon
  • Ginger-green chili paste/Adrak-Hari mirch paste - 1/2 teaspoon
  • Lemon juice - of 1 big lemon
  • Sugar - 1/2 teaspoon
  • Salt - to taste
  • Turmeric powder/Haldi powder - 1/4 teaspoon
  • Coriander seeds-Cumin seeds powder - 2 teaspoon
  • Red chili powder/Lal mirch powder - 1 teaspoon
  • Water - as required

Instructions

  1. Place a pressure cooker on low flame. Put 1 tablespoon oil and add cumin seeds, as the cumin seeds splutter, put a pinch of asafoetida powder and onion. Mix and saute on low flame.
  2. Then sprinkle a little salt on the onion and mix. Put the diced potato and mix.
  3. In a bowl, add chopped coriander leaves, roasted peanut powder, ginger-green chili paste, lemon juice, sugar, hing powder, and salt to taste.
  4. Then, add turmeric powder, coriander seeds-cumin seeds powder, red chili powder, 1 tablespoon of oil and mix with hands.
  5. Mix the onion and potato in the pressure cooker and add the coriander masala. Mix well. Add water till all the ingredients are submerged. Add a little salt and mix well.
  6. Close the lid and cook on high flame for 3 whistles. After it cools down, garnish with coriander leaves.
  7. The Aloo Dhaniya Sabji is ready to be served.
