Aloo Gobhi Ki Sabzi is a quick and easy dry curry.

Aloo Gobhi Ki Sabzi is made with a combination of potatoes and cauliflower. This is one of the most common side dishes served with roti, chapati, or paratha. Ingredients

  • Cauliflower / Gobhi - 250 grams Florets
  • Water - As required
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 Teaspoon
  • Oil - 2 Tablespoon
  • Potato / Aloo - 2 chopped in slices
  • Cumin seeds / Jeera - 1/2 Teaspoon
  • Asafoetida / Hing - A pinch
  • Bay leaf / Tej patta - 1
  • Black cardamom / Badi elaichi - 1
  • Cinnamon / Dalchini - 1
  • Cardamom / Elaichi - 2
  • Ginger-green chilli paste / Adrakh hari-mirchi paste - 1 Teaspoon
  • Coriander powder / Dhaniya powder - 1 Tablespoon
  • Red chilli powder / Lal mirch powder - 1 Tablespoon
  • Turmeric powder / Haldi powder - 1 Teaspoon
  • Cumin seeds powder / Jeera powder - 1 Tablespoon
  • Tomato puree - Of 4 tomatoes
  • All spice mix powder / Garam masala - 1 Teaspoon
  • Dry fenugreek leaves / Kasuri methi - 1 Tablespoon
  • Coriander leaves / Hara dhaniya - A handful

Instructions

  1. Add cauliflower in boiling water. Add salt and turmeric powder. Boil it for 2 to 3 minutes. Strain water and keep boiled cauliflower aside.
  2. Heat 1 tablespoon oil in a pan. Add potatoes. Shallow fry it on medium flame.
  3. Add blanched cauliflower in the same pan. Mix well. Stir it in between till potatoes and cauliflower turns into nice golden colour and becomes soft.
  4. Cover the pan with a lid. Cook it on medium flame for 5 to 7 minutes. Stir it in between.
  5. Now heat 1 tablespoon in another pan. Add cumin seeds, asafoetida, bay leaf, black cardamom, cinnamon, cardamom, ginger-green chilli paste. Mix well.
  6. Then add coriander powder, red chili powder, turmeric powder, cumin seeds powder. Mix well.
  7. Add tomato puree. Mix well. Cook gravy till oil separates from it.
  8. Now add cooked potatoes and cauliflower in the gravy. Mix well.
  9. Add all spice mix powder, salt, dry fenugreek leaves by rubbing between your palm. Mix well. Garnish it with coriander leaves.
  10. 'Aloo Gobhi Ki Sabzi' is ready to be served.
