Tips and Suggestions By Mom Chef:

  • You can use grated ginger-green chili paste instead if it’s paste.
  • You can use frozen peas also.
  • Use butter or ghee instead of vegetable oil.
  • You can give rest to the dough if you want.
  • Keep butter and all-purpose flour ratio 1:1.
  • Use ghee instead of butter for slurry. But make sure it is not in liquid form.
  • You can make layers as per your choice.
  • Keep all-purpose flour and water ratio 1:2 for liquid slurry.
  • You can grease pattice in between frying in the air fryer to give shine. It is completely optional.

Ingredients

  • FOR STUFFING
  • Oil - 1 Tablespoon
  • Peas / Matar - 1/2 Cup
  • Ginger - Green Chili Paste / Adrakh Hari Mirch Paste - 1 Teaspoon
  • Red Chili Powder / Lal Mirchi Powder - 1 Teaspoon
  • Turmeric Powder / Haldi Powder - 1/2 Teaspoon
  • Coriander Powder / Dhaniya Powder - 1 Teaspoon
  • Roasted Cumin Powder / Jeera Powder - 1 Teaspoon
  • All Spice Mix Powder / Garam Masala - 1 Teaspoon
  • Dry Mango Powder / Aamchur Powder - 1 Teaspoon
  • Salt - As Per Taste
  • Potato / Aloo - 2 ( Boiled and Mashed )
  • FOR DOUGH :
  • All Purpose Flour /Maida - 1 Cup
  • Salt - As Per Taste
  • Vegetable Oil - 1 Tablespoon
  • Water - As Required
  • FOR BUTTER SLURRY :
  • Butter - 1 Teaspoon ( Room Temperature )
  • All Purpose Flour /Maida - 1 Teaspoon
  • FOR LIQUID SLURRY TO SEAL THE PATTICE:
  • All Purpose Flour /Maida - 1 Teaspoon
  • Water - 2 Teaspoon

Instructions

  1. PREPARING STUFFING :
  2. Heat oil in a pan. Add peas, ginger green-chili paste mix them well. Add red chili powder, turmeric powder, coriander powder, cumin powder, all spice mix powder, dry mango powder, salt. Mix it well.
  3. Now add potato and mix well. Keep it aside. Let it cool down completely.
  4. PREPARING DOUGH :
  5. Take all purpose flour in a bowl. Add salt, oil, mix it well.
  6. Add water as required and knead the semi soft consistency dough.
  7. PREPARING BUTTER SLURRY :
  8. Take a butter, all purpose flour in a bowl, Mix it well.
  9. PREPARING LIQUID SLURRY TO SEAL THE PATTICE :
  10. Take all purpose flour and water in a bowl and mix it well.
  11. PREPARING PATTICE :
  12. Take a small portion of the dough, Dust it with flour and roll it like small roti. Prepare all small roti.
  13. Take a roti, apply butter slurry on it and spread it well. Dust dry all purpose flour on slurry. Prepare 4 layers with the same method.
  14. Put all 4 prepared layers on one to another. Put one simple roti ( without slurry ) on the 4th layer and cover it by pressing with fingers from all sides.
  15. Now roll it tightly. Apply liquid slurry in the last and seal it well.
  16. Prepare roll and cut it in a small portion like peda. Take 1 peda and press it between plam. Prepare all flat balls with same method.
  17. Take 1 flat ball dust it with maida and roll it. Cut it in a square shape. Apply liquid slurry on the all borders.
  18. Now stuff it with potato mixture in a the middle and fold it in a triangle shape. Press all side with fingers and seal it well.
  19. Prepare all Pattice by repeating this method. Apply oil on all prepared pattice.
  20. Set the temperature of air fryer at 200 degrees for 8 minutes. Place 3 pattice in the air fryer.
  21. After 4 Minutes, brush pattice with oil from all sides again. Keep it in the Air Fryer again. Now take it out after 4 minutes.
  22. Delicious, healthy and crunchy Aloo Puff Pattice In Air Fryer is ready to serve with ketchup.
