Ambal | Khatta Meetha Kaddu is a famous dish of Jammu.

Ambal | Khatta Meetha Kaddu is one of the best pumpkin sabji. This is a simple and unique dish. It is unique because of this method of preparation. It has a nice sour flavor of tamarind, a sweet taste of jaggery and whole green chilli along with the dry red chilli adding to the taste of the dish. Pumpkin is rich in minerals that include calcium and magnesium. It is full of oxidants and helps to improve immunity. Everyone will like this sweet and sour sabji. Tips and Suggestions by a Mom Chef:

  • Add 100 gms tamarind pulp for 250 gms pumpkin sabji.
  • Soak tamarind in the water for 10 minutes, then mash it and strain it to prepare its pulp.
  • Green chilli and dry red chilli should be added whole to get nice flavor of them.
  • Green pumpkin can be used with its peel.

Ingredients

  • Mustard Oil / Sarso Ka Tel - 2 tbsp
  • Dry Fenugreek Seeds / Dana Methi - 1/2 tsp
  • Dry Red Chilli / Sukhi Lal Mirchi - 3
  • Asafoetida / Hing - A pinch
  • Pumpkin / Kaddu - 250 gms
  • Red Chilli Powder / Lal Mirch Powder - 1 tsp
  • Turmeric Powder / Haldi Powder - 1/2 tsp
  • Salt - As per taste
  • Water - As required
  • Tamarind Pulp / Imli Ka Pulp - Of 100 gms tamarind
  • Jaggery / Gud - 1 tsp
  • Green Chilli / Hari Mirch - 2
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Heat mustard oil in a pan. Add dry fenugreek seeds and saute it for a few seconds.
  2. Then add dry red chilli, asafoetida, and pumpkin. Mix well.
  3. Further, add red chilli powder, turmeric powder, and salt. Mix well. Cover the pan with a lid and cook it for 2 minutes on medium flame.
  4. Then add little water and mix well. Cover the pan with a lid and cook it for 8 to 10 minutes on medium flame. Keep stirring occasionally in between.
  5. Once pumpkin cooked well and water evaporates, add tamarind pulp and jaggery. Mix well.
  6. Now add green chilli and mix well. Cover the pan with a lid and cook it for 2 minutes on medium flame.
  7. Once done, turn off the flame and take it out in a serving bowl.
  8. 'Ambal | Khatta Meetha Kaddu' is ready to be served.
