Avarekai Sambar | Broad Beans Sambhar is a lip-smacking sambar for everyone. 

Avarekai Sambar | Broad Beans Sambhar is a very popular dish from Karnataka. In every household, people love and enjoy this sambar in the winter season. This uses seeds/beans of Avarekai/broad beans, freshly ground sambar masala. Freshly prepared masala gives a nice taste and it becomes more flavourful. This is easy to prepare as well. You can enjoy this sambar with boiled rice or roti. It tastes amazing in all the forms. Moreover, it is very healthy as well. So, try to make this sambar at home and enjoy with your family and friends. Do share your feedback with us.

This sambar was prepared by Saroj Sona ji –  a lovely grandmom who loves to cook traditional recipes.

Tips and Suggestions by Mom Chef:-

  • Roast the ingredients for sambar masala on a low flame only. Then grind the ingredients with little water so that all the ingredients grind properly.
  • You can adjust the spiciness according to your taste.

Ingredients

  • INGREDIENTS FOR SAMBAR:-
  • Seeds/beans of Avarekai/Broad Beans/Sem Phali/Wal Phali - 500 Gram
  • Ghee/clarified butter - 2 Tablespoon
  • Mustard seeds - 1/2 Teaspoon
  • Cumin seeds - 1/2 Teaspoon
  • Hing/Asafoetida - a pinch
  • Dry Red Chilli - 2
  • Turmeric powder - 1/2 Teaspoon
  • Salt - as per taste
  • Imli Pulp/Tamarind Pulp - 1/2 Cup or as per taste
  • Coriander Leaves - as required for garnishing
  • INGREDIENTS FOR SAMBAR MASALA:-
  • Chana Dal/Bengal Gram - 1/4 Cup
  • Dhuli Urad Dal/Black Gram without skin - 2 Tablespoon
  • Coriander Seeds - 1 Tablespoon
  • Cumin seeds/Jeera - 1 Tablespoon
  • Dry Red Chilli - 10 to 15
  • Dalchini/Cinnamon Stick - 4 to 5
  • Laung/Cloves - 4 to 5
  • Onion - 1 diced
  • Garlic - 10 to 12 cloves
  • Grated Dry Coconut - 1 Cup
  • Hing/Asafoetida - 1/2 Teaspoon
  • Ghee/Clarified butter - 2 Tablespoon
  • Water - 1/4 Cup
  • INGREDIENTS FOR TADKA:-
  • Onion - 2 sliced
  • Mustard seeds - 1/2 Teaspoon
  • Cumin seeds - 1/2 Teaspoon
  • Hing/Asafoetida - a pinch
  • Curry Leaves - few
  • Ghee/Clarified Butter - 1 Tablespoon

Instructions

  1. PREPARING THE SAMBAR MASALA:- Heat 1 tablespoon ghee in a pan.
  2. Add 2 tablespoon chana dal, urad dal. Roast them on a low flame.
  3. Once the lentils turns pinkish, add coriander seeds, cumin seeds. Roast on a low flame.
  4. Add dry red chillies, cinnamon sticks, cloves. Roast for few seconds.
  5. Then add dices onion, garlic coves, grated dry coconut, asafoetida. Mix well and roast for a minute then switch off the flame. Let the mixture cool completely.
  6. Grind the above prepared mixture with 1/4 cup water to make a smooth paste.
  7. PREPARING THE SAMBAR:- Boil water in a vessel.
  8. Heat 2 tablespoon ghee in a big pan.
  9. Add mustard seeds, cumin seeds, asafoetida, dry red chillies.
  10. Then add washed seeds/beans of Avarekai or broad beans. Mix well and cook.
  11. Add turmeric powder, salt. Mix well. Then add boiled water. Cover and cook it on a medium flame for 10 minutes or until the beans are completely cooked.
  12. Once the beans are cooked, add ground paste. Mix well. Let it cook.
  13. Add tamarind pulp to it. Mix well and cook.
  14. PREPARING THE TADKA:- Meanwhile, prepare the tadka. Take a pan, add 1 tablespoon ghee and heat it.
  15. Add mustard seeds, cumin seeds, asafoetida, curry leaves. Then add sliced onion and saute it until onion turns translucent.
  16. Add this tadka to the sambar. Add salt as per taste and let it boil for a minute. Then switch off the flame. Garnish it with coriander leaves.
  17. Delicious '' is ready to be served.
