Aviyal | Kerala Famous Sabzi is a traditional curry from Kerala.

Aviyal | Kerala Famous Sabzi is a healthy and easy sabzi popular in Kerala. This is a traditional recipe that uses several vegetables for its preparation. Since different kinds of vegetables are used to prepare this sabzi, this is a very healthy dish. It is one of the dishes without which no feast is complete. The preparation of this dish might vary in some regions. So try making this traditional Kerala dish at your home and let us know your feedback in the comments section.

Tips and Suggestions by the Chef:-

  • While preparing the coconut paste, you can also add turmeric powder to it.
  • You can also add different vegetables that you like or are available to you.
  • Remember to cut the vegetables of similar size.
  • Before cooking the raw banana, remember to scrape the skin.
  • You can add water as per your preferred consistency.

Ingredients

  • FOR PREPARING THE COCONUT PASTE-
  • Sambar Pyaaz/ Onions - 10 to 12
  • Jeera/ Cumin seeds - 1 teaspoon
  • Nariyal/ Coconut - 1 cup freshly grated
  • Curry patta/ Curry leaves - 5 to 6
  • Green chillies - as per taste slit
  • Salt - as per taste
  • FOR PREPARING THE AVIYAL-
  • Safed kaddu/ White pumpkin - 100 gm
  • Sahjan ki fali/ Drumstick - 100 gm
  • Jamikand/ Elephant foot - 100 gm
  • Kachra/ Yellow cucumber - 100 gm
  • Kaccha aam/ Raw mango - 100 gm
  • Kaccha kela/ Raw banana - 100 gm
  • Chichinda/ Snake gourd - 100 gm
  • Water - 1/2 cup
  • Namak/ Salt - as per taste
  • Hari mirch/ Green chilli - as per taste slit
  • Dahi/ Curd - 3 tablespoon
  • Nariyal tel/ Coconut oil - 1 teaspoon
  • Curry patta/ Curry leaves - 5 to 6

Instructions

  1. FOR PREPARING THE COCONUT PASTE-
  2. In a grinding jar, add sambar onion, cumin seeds, coconut, curry leaves, green chillies, and salt to it and grind it to make a coarse paste.
  3. FOR PREPARING THE AVIYAL-
  4. Cut snake gourd, white pumpkin, drumstick, elephant foot, yellow cucumber, raw mango, raw banana in similar sizes.
  5. Add snake gourd, white pumpkin, drumstick, elephant foot, yellow cucumber, raw mango, raw banana, water, salt, and green chillies to a pan and boil them for 15 to 20 minutes.
  6. Add the coconut paste to the pan and mix it well with the other ingredients.
  7. Add curd to the pan and mix it well. Cover the pan and let it cook for 2 to 3 minutes on low flames.
  8. Add curry leaves and coconut oil to the pan and mix well with other ingredients.
  9. Aviyal is ready to be served.
