Barule | Aloo Barule is popular dish of Aligarh, Uttar Pradesh.

Barule | Aloo Barule is a famous and mouthwatering potato snack. It is a favorite, delectable street food of Aligarh. This amazing dish is made from baby potatoes that are coated in a batter of besan, corn flour, and rice flour. Then deep fried in oil and garnished with chaat masala and green chutney. Moreover, you can find it easily on roadside stalls during the winter season. This is a crispy snack and appetizer. In addition, the crunchy, exciting texture and vibrant flavor make it popular amongst foodies. Tips and suggestions by the Mom Chef:

  • The ratio of rice flour to gram flour should be 1:1.
  • The ratio of corn flour to gram flour should be 1:2.
  • Arrowroot flour can be added instead of corn flour.
  • Turmeric powder can be added instead of the yellow food color.
  • The fried hot baby potatoes can be pressed with a bowl or tissue paper instead of pressing them between your palms.
  • It is optional to deep fry the potatoes twice.

Ingredients

  • Baby potatoes / Aloo - 10 to 11
  • Gram flour / Besan - 2 tbsp
  • Rice flour / Chawal ka aata - 2 tbsp
  • Corn flour - 1 tbsp
  • Salt -As per taste
  • Red chilli powder / Lal mirch powder - 1 tsp
  • Asafoetida / Hing - A pinch
  • Water - As required
  • Edible yellow food color - 2 Pinch
  • Oil - For frying
  • Chaat masala - As required
  • Green chutney - As required
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Cook the baby potato in a pressure cooker till 1 whistle. Then take them out. Let it cool down. Keep it aside.
  2. Take gram flour in a bowl. Add rice flour, corn flour, salt, red chilli powder, and asafoetida.
  3. Then add water gradually to make a batter of medium-flowing consistency. Then add Edible yellow food color. Mix well.
  4. Now add boiled baby potatoes into the batter and coat them evenly. Let it rest for 10 minutes.
  5. Meanwhile, heat oil in a pan to frying. Place the batter coated potatoes into the hot oil. Fry them on a medium flame for 2 to 3 minutes till golden in color.
  6. Then, take them out on a serving plate using a slotted spoon. Let it cool down.
  7. Now lightly press the fried baby potatoes with the help of palm so, it become slightly flat.
  8. Again fry them on a medium flame for 1 to 2 minutes. Once the potatoes are light brown in color, take them out on a serving plate using a slotted spoon.
  9. Now sprinkle chaat masala on it. Then add green chutney to it.
  10. 'Barule | Aloo Barule' is ready to be served.
