Bendekai Gojju | Bhindi Gojju In South Indian Style is a mouth-watering sabji from the south Indian cuisine.

Bendekai Gojju | Bhindi Gojju In South Indian Style is an extremely popular curry prepared from bhindi, tamarind extract, jaggery, and spices. The combination of sweetness, spiciness, sourness, and savoriness makes it different from other bhindi sabji. Serve it with roti or rice or paratha or chapati for lunch or dinner. Tips and Suggestions by Mom Chef:-

  • Wash and dry the bhindi properly. Apply oil or lemon juice to the knife before chopping the bhindi.
  • Soak the tamarind in water for 10 to 15 minutes and squeeze it. Tamarind juice is ready.
  • Make sure, to add sesame seeds at the end for roasting, as it requires very little time to roast.
  • Allow to cool the roasted whole spices and then grind it.
  • Adjust the spiciness, tanginess, and sweetness as per your taste.
  • Serve it hot for a better taste.

Ingredients

  • Oil - as required
  • Mustard seeds - 1 teaspoon
  • Whole urad dal/ husked black gram - 1/2 teaspoon for tadka and 2 teaspoons for masala
  • Turmeric powder - as required
  • Hing/ asafoetida - a pinch
  • Curry leaves - a few
  • Bhindi/ ladyfinger - 250 grams, chopped
  • Salt - as required
  • Tamarind juice - as required
  • Whole coriander seeds - 3 teaspoons
  • Cumin seeds - 1 teaspoon
  • Methi dana/ fenugreek seeds - 1/2 teaspoon
  • Dry coconut - as required, chopped
  • Dry red chilies - 7 to 8 or as required
  • Sesame seeds - 1/4 cup
  • Jaggery/ gud - as required

Instructions

  1. Heat a pan and add whole urad dal, whole coriander seeds, cumin seeds, fenugreek seeds, dry coconut, and dry red chilies. Roast it for 2 to 3 minutes, until you get a nice aroma.
  2. Lastly, add sesame seeds and roast it for a few seconds. Turn off the flame and allow it to cool down.
  3. Finely grind it and keep it aside.
  4. Heat oil in a pan and add mustard seeds, whole urad dal, turmeric powder, hing, and curry leaves. Saute it.
  5. Add bhindi and salt. Saute it on a medium flame for a minute.
  6. Add tamarind juice. Allow it to boil.
  7. Add jaggery and above-prepared masala (as required). Cook it for a few seconds.
  8. Delicious Bendekai Gojju | Bhindi Gojju In South Indian Style is ready to be served.
