Besan Karele Ki Sabji is a flavorful dish.

Besan Karele Ki Sabji is a healthy dish. The main ingredients are karela and onion. Applying the salt to the bitter gourd reduces its bitterness. Using, a little more amount of oil than regular times, makes it tasty. As the frying of karela along with onion reduces the bitterness. The addition of gram flour enhances the taste and is relishing while eating with onions in it. It tastes great with hot roti or phulka. Tips and suggestions by the Mom Chef:-

  • While cutting the bitter gourd into pieces, remove the ripe seeds and retain the small size seed.
  • If you want, you can peel the skin of the bitter gourd/karela.
  • Applying salt to the bitter gourd/karela pieces, helps to reduce the bitterness of it.
  • You can use any oil of your choice.
  • Frying the karela pieces also reduces the bitterness from the karela sabji.
  • If you want, you can add tamarind pulp also to the dish.

Ingredients

  • Bitter gourd/Karela - 5 to 6 no
  • Salt - to taste
  • Mustard oil/Sarson ka tel - 2 to 3 tablespoon
  • Cumin seeds/Jeera - 1 teaspoon
  • Asafoetida powder/Hing powder - a pinch
  • Ginger/Adrak - 1/2 inch grated
  • Green chili/Hari mirch - 1 no finely chopped
  • Onion/Pyaz - 1 medium size (finely chopped)
  • Gram flour/Besan - 2 tablespoon
  • Coriander seeds powder/Dhania powder - 1 teaspoon
  • All spice mix powder/Garam masala - 1/2 teaspoon
  • Red chili powder/Lal mirch powder - 1 teaspoon
  • Dry mango powder/Amchur powder - 1 teaspoon
  • Water - as required

Instructions

  1. Wash the karela and cut in circle pieces. Remove the ripe seeds and keep small seeds. Put the salt and mix. Rest for 30 minutes.
  2. Heat oil in a wok/kadhai. Put the cumin seeds, asafoetida powder, grated ginger and finely chopped green chili. Then put karela pieces and fry them for 5 to 7 minutes till they become soft.
  3. Then, put finely chopped onion and saute till they become brown in color. Add gram flour and mix well. Put salt as per taste and mix.
  4. Now, put the coriander seeds powder, all spice mix powder, red chili powder and dry mango powder. Sprinkle some water and mix well. Cook on medium to low flame for 2 to 3 minutes.
  5. The Besan Karele Ki Sabji is ready to be served.
