Bhindi Do Pyaza is a flavoursome and delicious preparation of bhindi/okra/ladies’ fingers.

Bhindi Do Pyaza is a mouthwatering dhaba style recipe. As the name suggests, it uses 2 onion.do pyaza which adds crunch to the dish. It takes less time and very easy to prepare. This spicy dish goes well with paratha/roti or naan or even tandoori roti. Everyone including Kids like to have bhindi in their meals. Moreover, you just require some veggies including bhindi, some spices.  So, try to make this yummy dish at your end and enjoy with your loved ones.

Tips and Suggestions by Mom Chef:-

  • To make the bhindi non-sticky, first, wash and dry it completely. You can use a kitchen towel to dry it. Then chop and pour the lemon juice over it.
  • Do not cover the bhindi while cooking. Else the colour will be darker.

Ingredients

  • Bhindi/ ladies' fingers/ okra - 250 Gram
  • Onion/ pyaz - 1 finely chopped + 1 diced
  • Ginger - 1/2 inch piece grated
  • Tomato - 1 medium sized grated + 1 diced
  • Salt - 1/2 Teaspoon or as per taste
  • Red chilli/lal mirch powder - 1/2 Teaspoon
  • Coriander/ dhania powder - 1 Teaspoon
  • Turmeric / haldi powder - 1/4 Teaspoon
  • Garam masala/All spice mix - 1/4 Teaspoon
  • Cumin/Jeera powder - 1/2 Teaspoon
  • Asafoetida/ hing - a pinch
  • Cumin seeds/ jeera - 1 Teaspoon
  • Dry Red Chillies - 3
  • Oil/ tel - 2 Tablespoon + 2 Tablespoon

Instructions

  1. Wash and dry bhindi. Cut them into long pieces. Dice the 1 onion and 1 tomato too
  2. Heat oil in a pan on a medium flame and add asafoetida, cumin seeds and dry red chilli to it. Let the seeds crackle.
  3. Add grated ginger. Mix well. Saute for a while. Then add finely chopped onion and saute it until it turns pinkish.
  4. Meanwhile, heat 1 tablespoon oil in a pan. Add bhindi and saute for 5-7 minutes uncovered on a medium flame. Once done take it out. In the same pan, add 1 tablespoon oil and saute the diced onion for 2 to 3 minutes then take it out.
  5. Once the onion turns pinkish, add turmeric powder, red chilli powder, coriander powder, cumin powder. Mix and roast it for few seconds.
  6. Then add 1 grated tomato and cook it. Add salt to it. Mix well and cook for 2 minutes. Then add 1 to 2 tablespoon water, cover the pan and cook the masala for a couple of minutes.
  7. Finally, add sauteed bhindi/ladies finger, onion and diced tomato. Mix well and cook for 2 minutes. Then sprinkle garam masala andswitch off the gas.
  8. Spicy and crispy 'Bhindi Do Pyaza' is ready to be served with chapati/puri.
