Ingredients

  • Namkeen Sev - 1 Cup
  • Fresh Curd - 1 Cup
  • Fresh Malai/Homemade Cream - 1 Tablespoon (optional)
  • Coriander powder - 1 Tablespoon
  • Turmeric powder - 1/4 Teaspoon
  • Red Chilli powder - 1 Teaspoon or as per taste
  • Kasuri/Dry fenugreek leaves - 1 Teaspoon
  • Garam Masala/All spice mix - a pinch
  • Cumin Seeds - 1/2 Teaspoon
  • Heeng/Asafoetida - a pinch
  • Ginger - 1/2 inch piece grated
  • Green Chilli - 2 cut into long pieces
  • Coriander leaves - as required for garnishing
  • Salt - as per taste (add little quantity as namkeen sev is used)
  • Oil - 1 Tablespoon

Instructions

  1. In a bowl, add coriander powder, turmeric powder, and red chilli powder. Add a little water about 2 Tablespoon and make paste.
  2. Heat oil in a kadai.
  3. Add asafoetida and cumin seeds. Let the seeds crackle.
  4. Then, add grated ginger and green chilli. Saute it for a few seconds.
  5. Add the coriander-red chilli- turmeric paste to it. Mix well and cook it on a low flame.
  6. Once the masala leaves the oil, add beaten fresh curd. Stir it continuously and cook it on a high-medium flame.
  7. When the gravy boils, add fresh malai to it. Mix well and cook for a minute.
  8. Add kasuri methi and garam masala. Mix well and cook. Then, add sev to the gravy. Turn off the flame. Garnish it with coriander leaves.
  9. Delicious 'Sev Ki Sabzi - Rajasthani Dhaba Style Recipe' is ready to be served. Serve it immediately.
