Bhune Pyaz Ki Sabji is a very famous dish of Rajasthan.

Bhune Pyaz Ki Sabji is a unique and tasty dish. The uniqueness is because of the method of preparation. Roasted onions and tomatoes give a smokey flavor to your dish. You can enjoy the dish in the monsoon season with hot tandoori roti. Everyone will love its taste. Also, it requires easily available ingredients from your kitchen. Here we bring an easy recipe for you so, try at your end and don’t forget to give your valuable feedback.

Tips and Suggestions by Mom Chef :

  • Rotate continuously tomatoes and onion on the direct flame.
  • You can either directly roast or use a stand to roast the tomatoes and onion.
  • Cut the onion’s top side and bottom side before the roast.
  • You can use grated ginger chili instead of its paste.
  • Apply oil on the onion before roasting. So, you can peel its skin easily.
  • You can add jaggery in this sabji if you want.
  • Make this recipe using Tamarind Chutney
  • If you want, you can make this dish only using tomatoes also.

Ingredients

  • Tomato / Tamatar - 2 to 3
  • Onion / Pyaz - 1 to 2
  • Oil - 2 Tablespoon
  • Cumin Seeds / Jeera - 1/2 Teaspoon
  • Mustard Seeds / Rai - 1 Teaspoon
  • Ginger chili paste / Adrakh Hari Mirchi Paste - 1 Teaspoon
  • Curry Leaves / Kadhi Patta - 7-8 leaves
  • Salt / Namak - As Per Taste
  • Red Chili Powder / Lal Mirchi Powder - 1 Teaspoon
  • Turmeric Powder / Haldi - 1/2 Teaspoon
  • Coriander Powder / Dhaniya powder - 1 Teaspoon
  • Cumin Powder / Jeera Powder - 1 Teaspoon
  • Dry Fenugreek Leaves / Kasuri Methi - 1 Teaspoon
  • Coriander Leaves / Hara Dhaniya - 2 Tablespoon Finely Chopped
  • Tamarind Chutney / Imli Chutney - 2 Teaspoon
  • Lemon Juice / Nimbu ka Ras - Of 1/2 Lemon

Instructions

  1. Take tomatoes, onion and roast it directly on high flame and turn it continuously till its skin become black.
  2. Peel charred tomatoes, onion and chop onion in medium to big sizes. Cut tomatoes in small pieces.
  3. Heat a oil in a pan add cumin seeds, mustard seeds, ginger chili paste and mix it well then add curry leaves then add chopped roasted tomatoes and saute it for few minutes.
  4. Now add red chili powder, turmeric powder, coriander powder, cumin powder mix it well with tomatoes and roast it. Then add dry fenugreek leaves by rubbing it between your palm.
  5. Stir it well while cooking it. When tomatoes separates oil add onions mix it well and sprinkle coriander leaves
  6. Now add tamarind chutney, lemon juice and mix it well.
  7. Bhune Pyaz Ki Sabji is ready to serve.
