  • Add salt carefully after washing peels as it was soaked in salt.
  • Add salt in a peels mixture just before making paratha, because peels will leave the water.
  • Press paratha gently after stuffing so stuffing will not come out.

Ingredients

  • Bitter Gourd peels / Karele Ka Chhilka - 1/2 Cup
  • Salt - 1 Teaspoon
  • Water - For Washing Peels
  • Onion / Pyaz - 1 Finely Chopped
  • Gram flour / Besan - 1 Tablespoon
  • Salt - As Per Taste
  • Red Chilli Powder / Lal Mirchi Powder - 1 Teaspoon
  • Coriander Seeds Powder / Dhaniya Powder - 1 Teaspoon
  • Cumin Seeds Powder / Jeera Powder - 1 Teaspoon
  • All Spice Mix Powder / Garam Masala - 1 Teaspoon
  • Asafoetida / Hing - 1 Pinch
  • Whole Wheat Dough / Gehu Ka Aata - As Required
  • Clarified Butter / Ghee - As Required

Instructions

  1. Take bitter gourd, peel it and collect its peels in a bowl then add salt and keep a side for 10 to 15 minutes.
  2. After 15 minutes wash it with water and squeeze the water by using muslin cloth.
  3. Take washed peels in a bowl add chopped onion, gram flour, Salt, red chili powder, coriander seeds powder, cumin seeds powder, all spice mix powder, asafoetida and mix it well.
  4. Take medium sized dough and roll it.
  5. Apply clarified butter on the paratha and put a spoonful of the bitter gourd peels stuffing in the center. Seal it properly.
  6. Dust it with flour and gently press it with hand . Roll it into paratha.
  7. Meanwhile heat a tava grease it with clarified butter. Cook the paratha on hot tawa. Apply ghee on both the sides and cook it on a medium flame.
  8. Once done, take out in a serving plate.
  9. Bitter Gourd Peels Stuffed Paratha | Karela Paratha is ready to serve with pickle and green chutney.
