Ingredients

  • FOR PREPARING DABELI MASALA :
  • Dry Coriander Seeds / Sabut Dhania - 2 tbsp
  • Fennel Seeds / Saunf - 2 tbsp
  • Sesame Seeds / Til - 2 tbsp
  • Dry Coconut / Sukha Nariyal - 5 to 6 Slices
  • Black Peppercorns / Kali Mirch - 1 tsp
  • Cumin Seeds / Jeera - 1 tsp
  • Bay Leaf / Tej Patta - 1
  • Black Cardamom / Badi Elaichi - 2
  • Cinnamon / Dal Chini - 1 Small stick
  • Star Anise / Chakra Phool - 2
  • Clove / Laung - 1 tsp
  • Dry Red Chilli / Lal Mirchi - 3 to 4
  • Kashmiri Red Chilli Powder / Lal Mirch Powder - 3 tbsp
  • Turmeric Powder / Haldi Powder - 1 tsp
  • Black Salt / Kala Namak - 1 tsp
  • Dry Mango Powder / Amchur - 1 tsp
  • Powdered Sugar / Pisi Hui Chini - 1 tsp
  • FOR PREPARING LAHSUN KI CHUTNEY :
  • Garlic / Lahsun - 15 to 20 Cloves
  • Dabeli Masala- 1 & 1/2 tbsp
  • Water - As required
  • FOR PREPARING MASALA PEANUTS :
  • Roasted Peanuts / Mungfali - 1 tbsp Peeled
  • Dabeli Masala- 1 tbsp
  • Oil - 1 tsp
  • FOR PREPARING POTATO STUFFING :
  • Oil - 1 tbsp
  • Dabeli Masala- 2 tbsp
  • Water - As required
  • Boiled Potato / Uble Hue Aloo - 3 to 4 Peeled and mashed
  • Salt - As per taste
  • Onion / Pyaz - 1 Finely Chopped
  • Pomegranate / Anardana - 1 tbsp
  • Nylon Sev / Zero Number Sev - As required
  • Masala Peanut/ Masala Mungfali - As required
  • Coriander Leaves / Hara Dhania - For garnishing
  • FOR PREPARING BUN DABELI :
  • English Oven Burger Bun - 1
  • Garlic Chutney / Lahsun Ki Chutney - As required
  • Tamarind Chutney / Imli Ki Chutney - As required
  • Potato Stuffing - As required
  • Pomegranate / Anardana - 1 tsp
  • Onion / Pyaz - 1 tsp Finely Chopped
  • Coriander Leaves / Hara Dhania - For garnishing
  • Butter - As required
  • Sweet Chutney / Meethi Chutney - As required
  • Nylon Sev / Zero Number Sev - As required
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. FOR PREPARING DABELI MASALA :
  2. Heat a pan. Add dry coriander seeds, fennel seeds, sesame seeds, dry coconut, black peppercorns, cumin seeds, bay leaf, black cardamom, cinnamon stick, star anise, cloves, and dry red chilli. Mix well and roast it for 2 minutes till the nice aroma begins to rise.
  3. Once done, turn off the flame. Then add kashmiri red chilli powder, turmeric powder, black salt, dry mango powder, and powdered sugar. Mix well.
  4. Now transfer it to a grinding jar and grind it for a few seconds to prepare dabeli masala. Take it out in a bowl. Keep it aside.
  5. FOR PREPARING LAHSUN KI CHUTNEY :
  6. Take garlic, dabeli masala, and little water in a grinding jar. Grind it for a few seconds to prepare its chutney. Take it out in a bowl. Keep it aside.
  7. FOR PREPARING MASALA PEANUTS :
  8. Take roasted peanuts in a bowl. Add dabeli masala and oil. Mix well. Keep it aside.
  9. FOR PREPARING POTATO STUFFING :
  10. Heat oil in a pan. Add dabeli masala and little water. Mix well. Now add potato and salt. Mix well on low flame.
  11. Once done, take it out on a plate. Spread it well on the plate.
  12. Now spread onion, pomegranate, prepared masala peanuts, and nylon sev on it. Garnish it with coriander leaves.
  13. FOR PREPARING BUN DABELI :
  14. Apply the prepared lahsun ki chutney on the inner part of the lower burger bun. Then spread the prepared potato stuffing on it. Add onion, pomegranate, and coriander leaves on it.
  15. Apply tamarind chutney on the inner part of the upper burger bun.
  16. Now cover the prepared bun dabeli with an upper burger bun.
  17. Meanwhile, heat a tawa. Grease it with butter. Apply butter on the bun dabeli. Toast it lightly from both sides. Once done, take it out to a plate.
  18. Now add sweet chutney on the edges of the bun dabeli and coat it with nylon sev.
  19. Take it out on a serving plate and garnish it with coriander leaves.
  20. 'Bun Dabeli' is ready to be served.
