Butter Kaju Matar Paneer | Dhaba Style Kaju Mutter Paneer is a creamy curry. This sabji is different from other paneer dishes. It is made with fried tomato, onion, paneer, and cashews. A spicy gravy with nice golden brown fried cashews and paneer gives a nice taste and texture to the spicy dish. This dish tastes great with hot roti, naan, or paratha. You just need some easily available ingredients from your kitchen to make a perfect dhaba-style curry. Tips and Suggestions by a Mom Chef:

  • You can fry tomato, onion, green chilli, and garlic direct in oil also, instead of pouring hot oil on them in a slotted spoon.
  • You can add raw or shallow-fried paneer to the sabji instead of frying it.
  • If you want, you can boil onion, tomato, green chilli, and garlic.
  • Keep fried paneer in the water if using it after some time.
  • Add oil while heating butter in a pan, so the butter will not burn.
  • The consistency of sabji can be adjusted as per choice.
  • If you want, you can add tomato ketchup or edible red food color to the sabji.

Ingredients

  • Tomato / Tamatar - 1
  • Onion / Pyaz - 1 Peeled
  • Green chilli / Hari mirchi - 2
  • Garlic / Lahsun - 4 to 5 Cloves
  • Water - As required
  • Oil - For frying
  • Cashews / Kaju - 7 to 8
  • Cottage cheese / Paneer - 1 Cup diced + 1/2 Cup grated
  • Butter - 2 tbsp
  • Oil - 1 tbsp
  • Cumin seeds / Jeera - 1/2 tsp
  • Salt - As per taste
  • Turmeric powder / Haldi powder - 1/2 tsp
  • Red chilli powder / Lal mirch powder - 1 tsp
  • Cumin seeds powder / Jeera powder - 1 tsp
  • Coriander powder / Dhaniya powder - 1 tsp
  • Parboiled green peas / Matar - 1 Cup
  • All spice mix powder / Garam masala - 1 tsp
  • Dry fenugreek leaves / Kasuri methi - 1 tsp
  • Coriander leaves / Hara dhaniya - A handful + For garnishing
  • Fresh cream / Malai - 1 tbsp
  • tsp = teaspoon
  • tbsp = tablespoon

Instructions

  1. Heat oil in a deep frying pan. Take onion, tomato, green chilli, and garlic in a slotted spoon. Put the slotted spoon on the hot oil pan. Pour the oil on it for 1 to 2 minutes.
  2. Then keep them aside and let them cool down. Peel fried tomato. Then chop onion and tomato. Transfer them to a grinding jar. Grind them to make a puree. Add little water and grind it again for a few seconds. Keep it aside.
  3. Now take cashew and paneer in a slotted spoon. Put the slotted spoon on the hot oil pan. Slightly put the slotted spoon in hot oil. Stir it occasionally. Take it out. pour the hot oil on it. Likewise, fry cashew and paneer for 1 to 2 minutes.
  4. Heat butter and oil in the pan. Add cumin seeds and the prepared puree. Mix well.
  5. Add salt, turmeric powder, red chilli powder, cumin seeds powder, and coriander powder. Mix well.
  6. Saute it for 1 to 2 minutes on medium flame. Stir it occasionally.
  7. Further, add green peas and mix well. Add all spice mix powder, dry fenugreek leaves by rubbing between palms, and coriander leaves. Mix well.
  8. Then add fried cashews and paneer. Mix well. Add a little water mix well and boil it for 1 to 2 minutes on medium flame.
  9. Add fresh cream and mix well. Then add dry fenugreek leaves by rubbing between palms and grate paneer on it. Mix well.
  10. Garnish it with coriander leaves and take it out to a serving bowl.
