Chole is an extremely delicious north Indian curry.

Chole is one of the most simple and easy curries. This spicy curry is prepared from chickpeas, onion, tomatoes, ginger, and Indian spices. The recipe is generally relished with roti, kulcha, tandoori roti, layered paratha, bhatura, or puffed poori and also with a choice of rice. Chickpeas are one of those ingredients which are very versatile and are used all over the world in their everyday cooking. It is also a great protein option for vegetarians. Chickpea Curry is prepared with a different set of ingredients, depending upon the region it belongs too. The star ingredient of this protein-rich curry is Chole Masala, which gives it a delicious taste and makes it different from other Curries.   • Add a teabag while boiling chole, it gives a nice color.
  • If you do not have a teabag than you can also use tea in the boiling chole.
  • Use ghee while cooking chole, it gives a nice taste.

Ingredients

  • Oil - 1 tablespoon
  • Ghee - 1/2 tablespoon
  • Bay leaf - 1
  • Cinnamon stick - 1 small
  • Cardamom - 1
  • Clove - 1
  • Asafoetida /hing - a pinch
  • Onion - 1/2 small sized finely chopped
  • Tomato - 1 big sized finely chopped
  • Ginger - small piece and 4 to 5 julienne pieces
  • Green chili - 1
  • Water - as required
  • Chole masala - 2 tablespoon
  • Pomegranate/Anardana powder - 1 tablespoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Roasted cumin powder - 1 teaspoon
  • Chickpeas/chole - 1 big bowl
  • Salt - as required
  • Garam masala/mixed spice - 1 teaspoon
  • Coriander leaves - 1 teaspoon finely chopped

Instructions

  1. Wash the chole and soak it for 6 to 7 hours. You can soak it overnight also.
  2. Now, boil the water and add chole to it. Add a teabag to it for a nice color.
  3. Take 7 to 8 whistles for boiling it.
  4. Now, Heat oil in a pan.
  5. Add ghee to it.
  6. Add bay leaf, cinnamon stick, clove, cardamom, and hing. Saute it.
  7. Add onion and saute it until it's color changes to light pink. Keep the flame medium.
  8. Add tomato puree in it. For preparing it, we need tomato, ginger, green chili, and water. Grind all the ingredients.
  9. Keep the flame medium and cook it for 5 minutes.
  10. Add dry masala. For preparing it, we need chole masala, pomegranate powder, red chili powder, coriander powder, and roasted cumin powder
  11. Cover the lid and keep the flame high. Cook it for 5 minutes.
  12. Add chole and salt. Stir and allow to cook it. Keep the flame low to medium and cover the lid.
  13. Cook it for 5 to 7 minutes. For thickness mash some chole in it.
  14. Add garam masala and cook it for 2 to 3 minutes. Keep the flame medium and cover the lid.
  15. Add ginger julienne and coriander leaves for garnishing.
  16. Delicious Chole is ready to be served.
