Cucumber Sabji in South Indian Style is a healthy and nutritious sabji.

Cucumber Sabji in South Indian Style is a healthy and simple sabji recipe prepared from the cucumber.  It is a different style of cucumber sabji. Cucumbers are low in calories and high in vitamins and minerals. It helps in digestion problems, weight loss, high blood pressure. Try to prepare this healthy and tasty sabji and enjoy it with family and friends. Share your feedback in the comment section.

  • Use fresh and tender cucumber.
  • You can also peel the cucumber before using it.
  • You can store the roasted bengal gram and dry grated coconut mixture in an airtight container for later use.
  • Adjust the spices as per requirement and serve it hot for the better taste.
  • Serve it with the roti or paratha or jeera rice.

Ingredients

  • Oil - 1 tablespoon
  • Urad dal/ split and husked black gram - 1/2 teaspoon
  • Cumin seeds - 1/4 teaspoon
  • Mustard seeds - 1 teaspoon
  • Green chili - 1 slit
  • Curry leaves - 4 to 5 chopped
  • Hing/ asafoetida - a pinch
  • Turmeric powder - 1/2 teaspoon
  • Cucumber - 1 cup chopped
  • Salt - as required
  • Roasted bengal gram - 2 tablespoons
  • Dry grated coconut - 2 tablespoons
  • Coriander leaves - finely chopped as required for garnishing

Instructions

  1. Heat oil in a pan and add urad dal, cumin seeds, mustard seeds, green chili, curry leaves, hing, turmeric powder, and cucumber. Saute it well on medium flame.
  2. Add salt and saute it. Cover and cook it for 2 minutes.
  3. Meanwhile, grind roasted bengal gram and dry grated coconut together.
  4. Now, add 2 to 3 teasspoon of mixture and saute it. Cover and cook it for a few seconds on high flame.
  5. Garnish it with the coriander leaves and turn off the flame.
  6. Delicious Cucumber Sabji in South Indian Style is ready to be served.
