Cut Mirchi Bajji | Mirapakaya Bajji | Andhra Style Stuffed Bajji is a simple and easy bajji recipe to prepare. Here the chili is stuffed with a cumin powder and spice mix first. Then dipped in gram flour batter and fried. Later the fried chilies are again stuffed with a spiced and tangy onion stuffing. The combination of crunchy spiced onions with the crispiness of the fried green chili bajji is truly tongue-tickling and yum. This delicious bajji is famous in Andhra Pradesh by the name mirapakaya bajji and is a well-known street food there. Try to prepare this mouthwatering recipe and enjoy it with family and friends. Tips and Suggestions by Mom Chef:-

  • Remember to prepare the batter with a thick consistency.
  • Deseed the chillies. Removing the seeds will help in reducing the spiciness of the chillies.
  • To cook the bajjis completely from the inside, fry them on a medium flame.
  • If you do not have dry mango powder, you can use lemon juice also.
  • Heat the oil properly before frying.
  • Adjust the spice according to your taste and serve it hot for a better taste.

Ingredients

  • Besan/ Gram flour - 1 cup
  • Ajwain/ Carom seeds - 1 teaspoon
  • Namak/ Salt - as required
  • Laal mirch powder/ Red chili powder - as required
  • Water - as required
  • Long mirchi/ chili - 1
  • Roasted Jeera powder/ Cumin powder - 1 teaspoon
  • Amchur/ Dry mango powder - as required
  • Tel/ Oil - as required for frying
  • Pyaaz/ Onion - 1 finely chopped
  • Dhaniya patta/ Coriander leaves - 1 teaspoon finely chopped
  • Kala namak/ Black salt - as required
  • Chaat masala - as required
  • Nimbu ras/ Lemon juice - 1 teaspoon
  • Roasted Moongfali/ Peanuts - as required for garnishing

Instructions

  1. In a bowl, add besan, ajwain, salt, and red chilli powder.
  2. Add water little by little and whisk the mix properly to avoid lumps. Make sure to prepare a thick batter and keep it aside.
  3. Take a long chilli, make a cut down its middle and deseed it. Keep it aside.
  4. Now, for the stuffing, add roasted cumin powder, ajwain, dry mango powder, salt, and some water in a bowl and mix them properly.
  5. Thereafter, stuff the chilli with the above stuffing and coat the chilli with the besan mixture.
  6. Heat enough oil in a pan and place the chilli into it. Fry it on a low to medium flame until it becomes golden and transfer it into a paper towel or tissue.
  7. Now, add onion, coriander leaves, black salt, chaat masala, and lemon juice in a bowl and mix them properly.
  8. Further, make a cut in the fried chilli and stuff the above mixture into it.
  9. Sprinkle some chaat masala and garnish it with the roasted peanuts.
  10. Lastly, cut it into pieces.
  11. Delicious 'Cut Mirchi Bajji | Mirapakaya Bajji | Andhra Style Stuffed Bajji' is ready to be served.
