Dahi Wali Lauki Ki Sabzi is delicious curry from Rajasthani Cuisine.

Creamy and rich curry Dahi Wali Lauki Ki Sabzi is favourite of all. The bottle gourd/lauki is cooked with spices then served with curd. This spicy and tangy curry goes well with roti/paratha. Most of the people do not like to eat bottle gourd. It has many health benefits so, everyone should include this superfood in the diet. Make this lip-smacking curry at home and you will become a fan of lauki. This is amazing in taste with many health benefits. So, try to make this yummy curry at home and enjoy with your loved ones.

Ingredients

  • Lauki/Bottle Gourd - 500 Gram
  • Fresh Curd - 3/4 Cup
  • Malai/Homemade cream - 2 Teaspoon
  • Ginger-Green Chilli paste - 1 Teaspoon
  • Green Chilli - 1 slit and cut into 2 long pieces
  • Kasuri Methi/Dry Fenugreek Leaves - 1/2 Teaspoon
  • Red Chilli Powder - 1 Teaspoon or as per taste
  • Turmeric powder - 1/2 Teaspoon
  • Coriander powder - 2 Teaspoon
  • Cumin seeds - 1/2 Teaspoon
  • Asafoetida - a pinch
  • Garam Masala/All spice mix - a pinch
  • Salt - as per taste
  • Oil - 2 Tablespoon
  • Coriander leaves - as required for garnishing

Instructions

  1. Wash and peel the bottle gourd. Cut into desired shape and size. Boil the pieces in water for 5 to 7 minutes.
  2. Heat oil in a kadai. Add asafoetida and cumin seeds. Let the cumin seeds crackle.
  3. Add ginger-green chilli paste. Saute it for a few seconds. Then add kasuri methi. Mix well.
  4. Now, add red chilli powder, turmeric powder, coriander powder. Saute it on low flame for few seconds. Add a little water to prevent masala from burning.
  5. Once the masala leaves the oil, add boiled lauki/bottle gourd. Mix well and cook for a minute.
  6. Add green chilli and mix well.
  7. Add malai to it and turn off the flame.
  8. Add beaten curd to it and mix well. Garnish it with chopped coriander leaves.
  9. Delicious 'Dahi Wali Lauki Ki Sabzi' is ready to be served.
